CHICKEN THIGHS WITH CREAMED CORN

Chicken Thighs with Creamed Corn image

Made in one pan, this easy dinner dish consists of crispy chicken thighs that are cooked on a bed of velvety creamed corn! So easy, yet so flavorful.

Provided by Olivia's Cuisine

Categories     Main Courses

Time 40m

Number Of Ingredients 13

6 large chicken thighs (about 3.5 pounds)
Salt and freshly ground pepper, to taste
1 tablespoon olive oil
3 cans (15oz each) corn, drained and divided
1 cup milk
1 chicken bouillon cube
2 tablespoons butter
1 small onion, chopped
2 cloves garlic, minced
3 tablespoons flour
1/2 cup heavy cream
1/4 cup shredded parmesan cheese
1/4 cup chopped parsley

Steps:

  • Preheat oven to 350 degrees F.
  • Browning the Chicken Thighs. Season chicken thighs with salt and pepper. Heat the olive oil in a large cast iron pan (or oven proof skillet), over medium-high heat, until shimmering. Place the chicken thighs, skin side down, and brown for 2-3 minutes per side, until golden brown. Remove from heat and reserve.
  • Prepare the milk. While the chicken thighs are browning, combine the milk, chicken bouillon and one can of corn (drained) in the jar of a blender. Blend until smooth. Reserve.
  • Making the Creamed Corn. After you've removed the chicken thighs, lower the heat to medium and remove all but 1 tablespoon of the chicken fat. Add the butter and sauté the onion and garlic until fragrant and softened. Then, add the flour and stir, letting it cook slightly to get rid of that raw flour taste.
  • Slowly pour the reserved milk corn mixture into the pan, stirring constantly, until thickened. Add the heavy cream, remaining corn, a pinch of salt and pepper, and parmesan cheese, mixing well. Taste for seasoning and adjust salt and pepper, if necessary. Remove from heat.
  • Finishing in the oven. Return the chicken thighs to the pan, nesting them in the creamed corn. Transfer the pan to the preheated oven and bake for 25-30 minutes or until the creamed corn is hot and bubbly and the chicken is crispy and cooked through. You can pop the pan under the broiler for the chicken to get extra crispy, if you wish.
  • Garnish with the chopped parsley and serve immediately!

CREAMY CORN SKILLET CHICKEN

Creamy Corn Skillet Chicken image

Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 4h5m

Yield 4 servings

Number Of Ingredients 21

3 tablespoons soy sauce
3 tablespoons balsamic vinegar
2 tablespoons light brown sugar
4 cloves garlic, crushed, plus 3 whole cloves garlic
Juice from 3 lemons
4 boneless chicken breasts
Kosher salt and freshly ground black pepper
Oil, for oiling grill grates
2 tablespoons unsalted butter
2 Fresno chiles, seeded and cut into 1/4-inch strips
2 poblano chiles, seeded and small diced
1 small Maui or other sweet onion, minced
1/2 cup sherry wine
4 ears fresh sweet corn, shucked and kernels cut off cobs
1 medium yellow squash, sliced into 3/4-inch half-moons
1 medium zucchini, sliced into 3/4-inch half-moons
1 cup heavy cream
1/2 cup plus 2 tablespoons grated Parmesan
1/2 cup chicken stock, plus more for thinning sauce if needed
1/4 cup fresh cilantro leaves
1/2 cup corn nuts, crushed in a plastic bag until sandy

Steps:

  • Whisk together the soy sauce, balsamic, sugar, crushed garlic and juice of 2 lemons in a bowl until the sugar is dissolved. Add the chicken and marinade to a resealable plastic bag and marinate in the fridge for 3 hours.
  • Take the chicken out of the marinade and dry off. Sprinkle with salt and pepper.
  • Preheat a grill to high heat. Place a large cast-iron skillet on one side of the grill. Place a smoker box or foil pan with wood chips on the grill.
  • Once the smoker has begun to produce smoke, liberally oil the grill grates and place the chicken on the grates. (We are just looking for a quick hard sear on both sides to get that char flavor. The goal is to finish cooking in the creamy, smoky corn.)
  • Add the butter to the skillet along with the Fresnos, poblanos, onions and remaining 3 whole cloves garlic. Saute until the onions are translucent and chiles are tender, about 10 minutes. Deglaze with the sherry and add the fresh corn, squash, zucchini, cream, 1/2 cup Parmesan and half of the stock. Season to taste.
  • Add the chicken to the skillet and lower the grill to medium. Close the lid and smoke the skillet over medium heat, playing with the position of the skillet to ensure you get the liquid to simmer ever so slightly, until the chicken hits 160 to 165 degrees F, 10 to 15 minutes. Take the skillet off the grill and pour in a little chicken stock if the sauce is very thick. Add the remaining lemon juice on top and garnish with the cilantro, remaining 2 tablespoons Parmesan and crushed corn nuts.

1 1/2 pounds boneless, skinless chicken thighs (about 8)
Coarse salt and freshly ground pepper
4 tablespoons unsalted butter
1/3 cup white-wine vinegar
1/3 cup low-sodium chicken broth
1 bunch scallions, white and pale-green parts chopped, plus dark-green tops, thinly sliced, for serving

4 ounces cream cheese, cut into 1-inch pieces
1/2 cup milk
Arugula, lightly dressed with extra-virgin olive oil and white-wine vinegar, for serving

Transfer to a bowl.
  • Wipe skillet clean; heat over medium. Melt remaining 2 tablespoons butter. Stir in chopped scallions; cook just until fragrant, about 1 minute. STICKY BRICK CHICKEN WITH CREAMED CORN AND CRISPY KALE

Sticky Brick Chicken with Creamed Corn and Crispy Kale image

Provided by Tyler Florence

Categories     main-dish

Time 1h50m

Yield 4 servings

Number Of Ingredients 14

4 ears white corn with husks
1/2 cup heavy cream
3 tablespoons butter
1/2 bunch chives, finely chopped
Kosher salt and freshly ground black pepper
1 bunch Tuscan kale, rinsed and dried, tough stems removed and roughly chopped
4 tablespoons extra-virgin olive oil
1 small chicken
1 tablespoon whole fennel seeds
1 tablespoon whole black peppercorns
1/2 bunch fresh thyme
1/2 cup chicken stock
3 tablespoons honey
Flaky sea salt

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the corn on a half sheet tray and bake for 20 minutes. Remove and cool slightly, then shuck the corn and remove the silk. Place a small bowl upside-down inside of a larger bowl. Rest the tip of one ear of corn on the smaller bowl and cut the kernels from the cob, which will fall into the larger bowl, and then repeat for the remaining ears of corn.
  • Place half of the kernels in a blender and blend on high speed until smooth. Add the pureed corn and whole kernels to a medium pot set over medium heat, then add the cream and butter, and bring to a simmer. Cook, stirring occasionally, until reduced to a pudding-like consistency, about 7 minutes. Finish with the chopped chives and add salt and pepper to taste.
  • Place the kale in a bowl and coat with 1 tablespoon of the olive oil. Lay out the kale in a single layer on a full sheet tray, then sprinkle with salt and bake until crispy, 10 minutes. Cool the kale completely.
  • Preheat the oven to 450 degrees F.
  • Using a pair of kitchen sheers, remove the backbone of the chicken and break down into 4 pieces.
  • Using either a mortor and pestle or a spice grinder, process the fennel and peppercorns to a coarse powder. Rub the chicken with 2 tablespoons of the olive oil and sprinkle liberally with the spice mix and some salt.
  • Coat a 12-inch ovenproof saute pan with the remaining 1 tablespoon olive oil and heat over medium-high heat, just until the oil reaches its smoke point. Place the chicken skin-side down in the pan. Place the thyme on and around the chicken in the pan, and then place the foil-wrapped brick on the chicken. Reduce the heat to medium and cook for 5 minutes, then transfer the pan to the oven and cook for 30 minutes.
  • Carefully remove the chicken from the pan and place on a cutting board skin-side up. Drain the fat and the thyme from the pan and set over high heat. Add the chicken stock and the honey, and cook until reduced to a thick glaze, scraping up all of the browned bits from the bottom of the pan. Brush the glaze on the chicken and finish with some flaky sea salt and freshly cracked black pepper. Serve the chicken with the creamed corn and crispy kale.

VINEGAR-GLOSSED CHICKEN

Vinegar-Glossed Chicken image

This dish has been a staple of Lucinda Scala Quinn's family for 20 years; from her cookbook "Mad Hungry."

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Number Of Ingredients 7

1 cup best-quality red-wine vinegar
2 to 3 garlic cloves, minced (about 2 tablespoons)
3 sprigs of fresh rosemary (about 1 tablespoon minced)
5 1/2 pounds bone-in chicken pieces (each part should be cut in half)
Coarse salt and freshly ground black pepper
Extra-virgin olive oil
3/4 cup chicken broth, plus more as needed

Steps:

  • At least 15 minutes and up to 2 hours before cooking, combine the vinegar, garlic, and rosemary to marinate.
  • Thoroughly season the chicken pieces with salt and pepper. Heat a 14-inch skillet (or two smaller skillets) over high heat and swirl in enough olive oil to coat the bottom of the skillet. Place the chicken in the skillet, skin side down. Don't crowd the chicken; leave space around each piece. Work in batches if necessary. You should hear an immediate sizzle when the chicken pieces hit the pan. Don't move them; it takes a couple of minutes to sear the chicken so it doesn't stick. Brown all sides; this will take 10 minutes per batch. Regulate the heat so it stays high but does not burn the chicken. Place all the browned chicken back in the skillet.
  • Add the chicken broth and scrape up any brown bits from the bottom of the pan. Lower the heat, simmer, and reduce for 15 to 20 minutes. Increase the heat to high and pour in the vinegar mixture. Swirl the pan and stir around as the vinegar evaporates to form a simmering glaze, 8 to 10 minutes. Serve immediately or refrigerate, and reheat with some extra broth.

Tips:

  • Mise en Place: Before you start cooking, measure and prepare all of your ingredients. This will help you stay organized and ensure that you don't forget anything.
  • Use a Meat Thermometer: Cooking chicken to the proper internal temperature is essential for safety and flavor. Use a meat thermometer to ensure that the chicken is cooked to 165°F (74°C) before removing it from the heat.
  • Make Sure Your Skillet is Hot Enough: When searing the chicken, make sure your skillet is hot enough before adding the chicken. This will help create a nice crust and prevent the chicken from sticking.
  • Don't Overcrowd the Skillet: When searing the chicken, don't overcrowd the skillet. This will prevent the chicken from cooking evenly.
  • Use a Good Quality Vinegar: The quality of the vinegar you use will have a big impact on the flavor of the dish. Use a good quality vinegar, such as apple cider vinegar or white wine vinegar.
  • Reduce the Vinegar Glaze: Reduce the vinegar glaze until it is thick and syrupy. This will help it adhere to the chicken and add a delicious flavor.
  • Serve Immediately: Vinegar glazed chicken is best served immediately. The chicken will become tough if it is allowed to sit for too long.

Conclusion:

Vinegar glazed chicken with creamed corn is a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is moist and flavorful, and the vinegar glaze adds a tangy sweetness that is perfectly balanced by the creamy corn. This dish is sure to please everyone at your table.
