CUCUMBERS & ONIONS IN VINEGAR

Cucumbers & Onions in Vinegar image

This super-quick side dish is found on many supper tables in my beloved West Virginia throughout the summer and it will taste a little different on each one based on how "Grandma did it." We all know that Grandma was ALWAYS the best cook, therefore HER way is always right. Yes, you can make it anytime these days, but those...

some cucumbers, sliced
some onion, sliced into thin rings
some apple cider vinegar
some water
some white sugar or sweetener, optional
some salt & pepper
OPTION:
some white vinegar instead of apple cider vinegar

Steps:

  • 1. Yes, the amounts are vague because it just depends on how much you want to make. You will want to taste along the way until you find the exact "taste" your family will enjoy. This is how I do it.
  • 2. Slice cucumbers and onion in a bowl. For 4 people, I would use 1-2 cucumbers and maybe 1/4 of a medium onion. For my family, I cut the onion rings into half.
  • 3. Pour apple cider vinegar over the cucumbers and onions. I use about 1/3 cup to start.
  • 4. Then I add a splash of water, about 1/6 of a cup, or half of the amount of vinegar.
  • 5. This next step is totally CONTROVERSIAL in West Virginia, so I hesitate to start another Civil War and divide the state, but I sprinkle in a little sugar, maybe a Tablespoon.
  • 6. Stir together and add salt & pepper, to taste. You can serve it immediately or cover the bowl and let it "set" in the refrigerator for a half hour or so. Mom always made it first, then fixed dinner while the cucumbers soaked up the deliciousness in the fridge. Serve with every summer dinner and make more wonderful food memories with your family. =^..^=

Categories     Onions

Time 1h10m

Yield 6-8 serving(s)

Number Of Ingredients 5

1 cup sugar
1 cup white vinegar
1 cup water
4 cucumbers, peeled and sliced
1 medium red onion, sliced

Steps:

  • In a large bowl mix first 3 ingredients.
  • Peel and slice cucumbers and onion and add to vinegar/water/sugar mix.
  • Cover and refrigerate for 1 hour before serving.
  • If all the cucumbers and onions are eaten reserve the vinegar/water/sugar mix and add fresh cucumbers and onion.
  • My servings are an estimate, as I can eat the whole bowl myself :) The cooking time is actually the refrigeration time.

Tips:

  • Choose firm, fresh cucumbers that are free of blemishes. English cucumbers or Kirby cucumbers work well for this recipe.
  • Use thinly sliced onions for a milder flavor, or thicker slices for a more pronounced onion flavor.
  • You can adjust the amount of vinegar and sugar in the pickling liquid to suit your taste preferences.
  • Be sure to sterilize your jars and lids before using them to store the pickled cucumbers and onions.
  • Store the pickled cucumbers and onions in a cool, dark place for at least 24 hours before eating them. This will allow the flavors to develop.
  • Pickled cucumbers and onions can be stored in the refrigerator for up to 2 months.

Conclusion:

Vinegar cucumbers and onions are a delicious and versatile side dish that can be enjoyed on their own or as a part of a larger meal. They are also a great way to preserve cucumbers and onions when they are in season. With just a few simple ingredients and a little bit of time, you can make your own delicious pickled cucumbers and onions at home.
