1/4 cup red wine vinegar
1/2 teaspoon ground cumin
1 teaspoon chili powder
6 small or 4 large russet potatoes
1/4 cup olive oil
2 tablespoons kosher salt
1 tablespoon coarse black pepper
1 small red onion, cut into medium wedges

Steps:

Tips:

  • To achieve crispy potatoes, ensure they are cut into even sizes and tossed thoroughly in the vinegar-chipotle marinade.
  • Roast the potatoes in a single layer on a baking sheet to promote even cooking.
  • Keep an eye on the potatoes during roasting to prevent burning. The cooking time may vary depending on the thickness of the potato slices.
  • For a spicier kick, use more chipotle powder or add a chopped jalapeƱo pepper to the marinade.
  • If you don't have coarse salt, you can use regular salt, but reduce the amount to 1/2 teaspoon.
  • Garnish the roasted potatoes with fresh cilantro or parsley for added flavor and color.

Conclusion:

These vinegar-coarse salt-chipotle roasted potatoes are a delightful side dish that combines tangy, smoky, and spicy flavors. The vinegar and chipotle powder create a unique marinade that infuses the potatoes with a savory and slightly spicy taste. The coarse salt adds a nice textural contrast to the crispy potatoes. This dish is perfect for any occasion, whether it's a casual weeknight meal or a special gathering. Serve them as a side dish with grilled or roasted meats, fish, or vegetables. You can also enjoy them as a snack on their own.
