SIMPLE MARINATED VINE RIPENED TOMATOES

Simple Marinated Vine Ripened Tomatoes image

A side dish that goes with anything, can be added to a green salad with the marinade as the dressing or serve alone, regardless they are delicious!!(chill time 1 hour)

Provided by Derf2440

Categories     Lunch/Snacks

Time 15m

Yield 4-6 serving(s)

Number Of Ingredients 9

3 -4 large vine ripened tomatoes, sliced
1/2 cup extra virgin olive oil
1/2 cup balsamic vinegar
1/4 cup celery, chopped
1/4 cup green onion
1 teaspoon sugar
1 teaspoon dry mustard
3 cloves garlic, smashed
1 tablespoon fresh basil, chopped or 1 teaspoon dried basil

Steps:

  • Put tomato slices overlapping in a low glass dish.
  • Put marinade ingredients in a jar with a lid and shake to blend.
  • Pour marinade over tomatoes, so that all are covered.
  • Cover with plastic wrap and chill for at least one hour.

Tips:

  • Choose ripe, flavorful tomatoes. The best tomatoes for this salad are ones that are vine-ripened and have a deep red color. Avoid tomatoes that are hard or green, as they will not have as much flavor.
  • Use a sharp knife to slice the tomatoes. This will help to prevent the tomatoes from tearing and will give you clean, even slices.
  • Don't overcrowd the salad. When you're assembling the salad, be sure to leave some space between the tomatoes, onions, and basil. This will allow the flavors to meld together and will prevent the salad from becoming soggy.
  • Use a light dressing. A simple vinaigrette or olive oil and vinegar dressing is all you need to dress this salad. Avoid using heavy dressings, as they will overpower the delicate flavors of the tomatoes and onions.
  • Serve the salad immediately. This salad is best enjoyed fresh. If you need to make it ahead of time, you can store it in the refrigerator for up to 2 hours. However, the tomatoes will start to lose their flavor the longer the salad sits.

Conclusion:

This vine-ripened tomato, sweet onion, and basil salad is a simple but delicious dish that is perfect for summer gatherings. The sweet tomatoes, crisp onions, and fragrant basil come together to create a refreshing and flavorful salad that is sure to please everyone at your table.
