Vin chaud is a traditional French mulled wine that is perfect for sipping on a cold winter day. It is made with red wine, spices, and citrus fruits, and is typically served warm. This article provides three different recipes for vin chaud, each with its own unique flavor profile.
The first recipe is a classic vin chaud made with red wine, orange, lemon, cinnamon, cloves, and nutmeg. The second recipe adds a bit of sweetness with the addition of honey, while the third recipe uses white wine instead of red wine for a lighter flavor. No matter which recipe you choose, you are sure to enjoy this delicious and festive drink.
MARCHé DE NOëL VIN CHAUD - FRENCH SPICED MULLED WINE
Whether you have just come of the ski slopes or you are wandering around a French Marché de Noël, a Christmas Market, this is JUST the beverage to warm the cockles of your heart, as well as your frozen fingers and toes! Vin chaud is hot-spiced wine served the French way, with a slug of Cognac of course! It's a traditional welcome drink and is very popular where I live in the South West of France; especially at Christmas and New Year - and you'll find it in all of the Christmas Markets at this time of year. Ladle this mulled wine into some heavy cut-glass punch cups; or for a real French feel, use an assortment of old wine glasses and to avoid them cracking, place a teaspoon in to the glasses beforehand - this takes the heat away from the glass. One word about the wine, please DO use a good wine, and not what is known as a "cooking wine" - I find that Beaujolais works well or a fruity Chinon.

Steps:
- Wrap the cardamom pods and cloves in a piece of cheesecloth or muslin.
- Mix the rest of the ingredients, apart from the cognac, together in a large saucepan. Add the bag of spices. Bring the mixture to a gentle simmer over a low heat. Do not allow the wine to boil.
- The mulled wine is hot enough when the sugar has dissolved. Add the Cognac to the saucepan when the sugar has dissolved and ladle the mulled wine through a tea strainer (or colander) into punch cups, mugs or glasses.

Steps:
- Pour the wine and cassis in a large pot Add the orange and lemon zest and all spices Heat the wine until it just begins to simmer Lower the heat and allow to steep with the spices for about 30 minutes Garnish with lemon slices, orange slices or cinnamon sticks
Tips:
- Choose the right wine. A good vin chaud starts with a good wine. Look for a red wine that is fruity and has a moderate amount of tannins, such as a Pinot Noir or a Merlot.
- Add your spices early. The spices need time to infuse the wine, so add them at the beginning of the cooking process.
- Don't boil the wine. Vin chaud is best served warm, not hot. Bring the wine to a simmer and then remove it from the heat. Let it steep for a few minutes before serving.
- Serve vin chaud with a garnish. A slice of orange, a cinnamon stick, or a star anise pod adds a festive touch to your glass of vin chaud.
Conclusion:
Vin chaud is a delicious and festive drink that is perfect for enjoying on a cold winter day. It is easy to make and can also be a great gift for friends and family. So next time you are looking for a warm and comforting drink, try a glass of vin chaud.
