8 ounces thick rice noodles
1 lb sirloin steak, tips thinly sliced
3 tablespoons fish sauce
1 teaspoon asian chili-garlic sauce
4 scallions, thinly slice
1/3 cup fresh whole cilantro leaf

Steps:

  • Prepare ginger. Peel, halve lengthwise and smash it.
  • Bring broth, ginger, lime zest and five-spice powder to boil in dutch oven over med-hi heat. Add noodles and cook until nearly tender, about 5 minuts.Stir in beef. Simmer until cooked thru and noodles are completely tender, about 2 minutes.

Steps:

  • For Dam Toi, which is used as a garnish for northern style pho, in a small bowl, combine sliced garlic, 1 cup water and 3 teaspoons salt. Cover and refrigerate overnight; drain. In a small jar, combine sliced garlic and vinegar. Heat remaining 1 cup water until hot; add to jar. Stir in sugar, remaining 1 teaspoon salt and chiles. Cover and let stand at room temperature overnight., In a large saucepan, cover beef bones with 2 liters water. Add 2 tablespoons salt and cider vinegar. In another large saucepan, cover boneless beef with remaining 1 liter water, remaining 2 tablespoons salt, wine and sliced ginger. Cover both saucepans and refrigerate 2 hours; drain (discarding ginger from boneless meat). Add enough cold water to each saucepan to cover bones and meat. Bring to a boil over medium-high heat. Boil 3 minutes; drain both saucepans and rinse bones and and boneless beef., Preheat oven to 425°. In a stockpot, cover bones and boneless beef with enough cold water to cover completely (about 5 liters). Bring to a boil over medium-high heat. Reduce heat; simmer, uncovered, skimming and discarding foam occasionally. Simmer until foam starts to collect more slowly, about 30 minutes., Meanwhile, arrange whole onion and whole ginger on an ungreased baking sheet. Roast until slightly charred, 10-15 minutes, turning occasionally. Remove and discard charred skins; set aside., In a dry small skillet, toast cinnamon sticks, anise, cardamom pods and coriander over medium heat until aromatic, 1-2 minutes, stirring frequently. Cool. Place spices on a double thickness of cheesecloth. Gather corners of cloth to enclose spices; tie securely with string. , Once foam is no longer collecting on surface of broth, add onion and ginger and spice bag. Stir in salt, MSG if desired and rock sugar. Simmer, uncovered, until beef is tender, about 1-1/2 hours. With tongs, remove beef to a large bowl; cool slightly. Wrap beef tightly in foil and refrigerate. , Continue simmering broth, uncovered, until broth is light golden brown and fragrant, 2-5 hours, stirring occasionally and removing any foam that collects on the surface., To serve, cook Banh Pho according to package directions; set aside. Remove beef from refrigerator and thinly slice against the grain. For each serving, in a small colander, add an individual portion of noodles and beef. Lower colander into simmering broth until beef and noodles are heated through. Add beef and noodles to a serving bowl. Top with additional broth, about 1 cup. Serve with garnishes as desired.

1 head large garlic, halved crosswise
4 kg medium yellow onion, halved lengthwise

¼ cup whole black peppercorn
6 pods whole star anise
1 lb beef brisket
kosher salt
¼ cup fish sauce, plus more to taste
1 lb boneless sirloin steak
1 lb flat rice noodle, cooked according to package instructions
2 cups fresh mung bean sprouts
1 small red onion, very thinly sliced lengthwise
1 jalapeño, sliced into thin rounds

Steps:

  • Place the beef bones in a large stock pot, then add enough cold water to cover by 2 inches (5 cm). Bring the mixture to a boil over high heat and cook for 10 minutes to blanch the bones and remove any impurities.

5 lbs beef bones with marrow
5 lbs oxtails
1 lb flank steak
2 large onions, unpeeled, halved, and studded with 8 cloves
3 shallots, unpeeled
2 ounces ginger, unpeeled (1 piece)
8 teaspoons star anise
1 cinnamon stick
4 medium parsnips, cut in 2-inch-chunks
2 teaspoons salt
1 lb beef sirloin
2 scallions, thinly sliced
1 tablespoon cilantro, chopped
2 medium onions, thinly sliced
1/4 cup hot chili sauce
1 lb rice noodles (1/4-inch wide (or banh pho))
1/2 cup nuoc nam (Vietnamese fish-sauce)
to taste black pepper, freshly ground
2 cups fresh bean sprouts
2 fresh chili peppers, sliced
2 limes, cut in wedges
1 bunch of fresh mint
1 bunch fresh Asian basil or 1 bunch regular basil

Steps:

  • Soak bone overnight in cold water.
  • Place bones, oxtails and flank steak in a large stock pot. Add SALTED BOILING water to cover and bring to a boil. Better yet, boil water, add salt then add bones. Marinate oxtails and flank steak with fish sauce, sugar, black pepper.
  • Cook 5 minutes, drain and rinse pot and bones.
  • Return bones to pot, add 6 quarts COLD WATER and bring to a boil. Skim surface of scum and fat. Stir bones at bottom. After 1 hour of simmering, add oxtails & flank steak.
  • The ginger root, shallots, and onion need to be roasted. The ginger root until the outer layer peels off easily. The onion until outer layer is semi-burnt. About 3 min. Roast the anise seeds in a pan for 2 min. Add to broth while waiting to boil.
  • Meanwhile, slice beef sirloin against grain into paper-thin slices, about 2-by-2 inches. Slice flank steak the same way; that is after they are cooked for about 1 hour.
  • Set aside. In a small bowl, combine scallions, cilantro, and half the sliced onions.
  • Place remaining onions in another bowl and mix in hot chili sauce. Soak rice noodles in water. When broth is ready, discard bones.
  • Strain broth through a colander lined with a double layer of damp cheesecloth into a clean pot. Add fish sauce and bring to a boil.
  • Reduce heat to simmer.
  • In another pot, bring 4 quarts of water to a boil.
  • Add noodles and drain immediately.
  • Do not overcook noodles
