2 garlic cloves, minced
1 small red onion, minced
1 stalk lemongrass, inner leaves only, minced
1 tablespoon fresh ginger, peeled and minced
2 jalapeno peppers, split, seeds removed
1 tablespoon cilantro, chopped
1 cup fish sauce
2 tablespoons sugar
1 lime, juice of
2 boneless skinless chicken breasts

Steps:

  • Combine the garlic, onion, lemongrass, ginger, peppers, cilantro, fish sauce, sugar, and lime in a saucepan.
  • Slowly bring to a boil over medium heat, then take off the stove and cool.
  • Cut chicken breasts into 1-inch cubes.

1/2 c brown sugar
1/2 c rice vinegar
1/4 c fish sauce
1 Tbsp sambal olek
4 clove garlic
1 inch piece of ginger grated
1 lb boneless skinless chicken cut into strips
fresh cilantro for garnish

Steps:

  • 1. Mix the brown sugar, rice vinegar, fish sauce, sambal olek, garlic and ginger together. Place the chicken in the mixture and marinate 1 hour.
  • 2. Remove the chicken from the marinade and place the marinade into a saucepan. Cook and reduce for 15 minutes.
  • 3. Place the chicken on water soaked wooden skewers and grill basting with the reduced marinade until done. Serve garnished with cilantro and reduce marinade for dipping
