VIETNAMESE-STYLE CHICKEN CURRY SOUP

Vietnamese-Style Chicken Curry Soup image

I use Vietnamese-style curry powder found at Asian food stores (usually called 'cari'). If you can't find it, use Madras curry powder. I make mine soupy, but you can make a thick stew by reducing the amount of chicken broth and water by half. Serve with rice or French bread, or both.

SOUTHERN VIETNAMESE CHICKEN CURRY

I served this at a dinner party and it was very popular. Do not expect heat or intensity or even subtlety. Instead you will have a rather heady, aromatic dish. Service with rice or rice vermicelli.

Tips:

  • Choose the right chicken. For this recipe, bone-in, skin-on chicken thighs or drumsticks work best. The bones and skin add flavor to the curry.
  • Don't be afraid to use a lot of spices. Vietnamese curry is known for its bold flavors, so don't be shy with the spices. Use a generous amount of turmeric, curry powder, cumin, and coriander.
  • Let the curry simmer for a while. The longer the curry simmers, the more time the flavors have to meld together. Simmer the curry for at least 30 minutes, or even longer if you have time.
  • Serve the curry with rice or noodles. Vietnamese curry is traditionally served with rice, but it also goes well with noodles. If you're serving the curry with rice, be sure to cook the rice according to the package directions.

Conclusion:

This Vietnamese chicken curry is a delicious and easy-to-make dish that is perfect for a weeknight meal. It's also a great way to use up leftover chicken. Serve it with rice or noodles, and enjoy!
