1/4 cup chopped scallion
1/4 cup roasted peanuts, coarsely chopped
2 tablespoons chopped fresh mint leaves
4 tablespoons chopped fresh cilantro, half reserved for garnish
1 -2 chili peppers, use whatever heat you can stand or 1 -2 just use mild chile
2 garlic cloves, minced
1 teaspoon grated fresh ginger
1 tablespoon sugar
1 tablespoon rice vinegar
3 tablespoons fresh lime juice
2 tablespoons oyster sauce, can use fish sauce
3 tablespoons olive oil
1/2 teaspoon fresh ground pepper

  • Shred the cabbage thinly so that it cooks evenly.
  • Marinate the chicken for at least 30 minutes, or up to overnight, to allow the flavors to develop.
  • Use a large skillet or wok to cook the chicken and cabbage so that there's plenty of room for everything to cook evenly.
  • Cook the chicken until it is cooked through, but not overcooked, or it will become tough.
  • Add the cabbage to the skillet and cook until it is softened, but still has a bit of crunch.
  • Stir in the sauce ingredients and cook until the sauce has thickened and is coating the chicken and cabbage.
  • Serve the salad immediately over rice or noodles.
