VIDALIA ONION SOUFFLE

Categories     Vegetable

Yield 8-10 servings

Number Of Ingredients 10

8 Tbs (1 stick) butter, unsalted
4 lb Vidalia or other sweet onion, thinly sliced
1/2 tsp salt
3 Tbs flour, all purpose
2 tsp baking powder
1/2 tsp nutmeg
1 tsp salt
6 eggs, large
2 cups heavy cream
3/4 cup Parmigiano_Reggiano cheese, grated

Steps:

  • 1. In large skillet, melt butter over low heat. Add onions and salt. Cook over low heat, stirring occasionally, until onions are soft and just start to color, about 45 minutes. Remove from heat, and set aside in pan to cool to room temp. 2. Preheat over to 350 degrees F. Butter a 9"x13" glass or ceramic baking dish. 3. Whisk flour, baking powder, nutmeg and salt in a small bowl. 4. In a large bowl, beat eggs with cream. Whisk in dry ingredients until well blended. Add cheese and mix well. 6. Gently stir in onions. Pour into baking dish. 7. Bake in oven for 45 minutes, until set and golden brown on top.

Tips:

  • Choose the right onions: Vidalia onions are the best choice for this soufflé, as they are sweet and have a mild flavor. However, if you can't find Vidalia onions, you can use another type of sweet onion, such as Walla Walla or Maui onions.
  • Don't overcook the onions: The onions should be cooked until they are soft and translucent, but not browned. If you overcook the onions, they will lose their sweetness and flavor.
  • Use fresh herbs: Fresh herbs, such as thyme, rosemary, and chives, add a lot of flavor to this soufflé. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use only half the amount.
  • Don't overbeat the egg whites: The egg whites should be beaten until they are stiff, but not dry. If you overbeat the egg whites, they will become tough and the soufflé will not rise properly.
  • Bake the soufflé immediately: Once you have folded the egg whites into the onion mixture, bake the soufflé immediately. If you let the soufflé sit for too long, it will start to deflate.

Conclusion:

This Vidalia onion soufflé is a delicious and elegant dish that is perfect for a special occasion. It is light and fluffy, with a rich onion flavor. The soufflé is also very easy to make, and it can be prepared in advance. If you are looking for a show-stopping dish that will impress your guests, this Vidalia onion soufflé is the perfect choice.
