2 boneless chicken breast halves
2 tablespoons vegetable oil
2 large potatoes, peeled and sliced
1 medium vidalia onions or 1 medium sweet onion, diced
1 can cream of mushroom soup, undiluted
paprika

Steps:

  • Wash chicken and pat dry.
  • Brown in the 2 Tbsp.
  • of oil and drain on paper towel.
  • Grease a 1 1/2 qt.
  • casserole dish.
  • Layer sliced potatoes on the bottom, the chopped onion next.
  • Pour soup over all (I added just a pinch of milk to my soup to make it pourable).
  • Place chicken breast on top, sprinkle with paprika.
  • Cover tightly with tinfoil and bake in a preheated 350* oven for 1 hour.
  • **This is the original recipe.
  • When I made it, I used cream of chicken soup because we don't like mushroom.
  • I also used bite sized pieces of stir fried chicken, but still cooked it for an hour.
  • I guess because it's covered in foil, it didn't dry out.
  • Was good enough for all 3 of us to like it!
  • *LOL*(that doesn't happen often) This would be a very easy recipe to double or triple!

2 large sweet onions...your choice
1 large chicken breast - split
1 can(s) 10.75 oz cream of mushroom soup
2 medium red potatoes - thickly sliced
2 Tbsp oil
paprika

Steps:

  • 1. brown chicken breasts in 2 Tablespoons of oil. Set aside on a paper towel . In a 1-1/2 quart greased casserole dish, layer the sliced potatoes on the bottom, follow with the sliced onions, chicken and then top off with the mushroom soup. Sprinkle with paprika. Bake in a 350 degree oven for 1 hour.
  • 2. You can scrub the potatoes and leave the skins on ...if you prefer. They can also be cut into medium chunks...you're choice.

4 large vidalia onions (peeled and sliced into 1/8 inch thick slices)
3 medium apples (peeled and sliced into 1/8 inch thick slices)
6 slices bacon (cooked and crumbled, reserve 2 tablespoons of the fat)
3/4 cup chicken broth
1/2 cup breadcrumbs

Steps:

  • Layer the onions, apples and bacon in a 2 quart casserole.
  • Pour the chicken broth over all.
  • Cover and bake at 350°F for 45 minutes.
  • While baking, saute bread crumbs in 2 tablespoons bacon fat.
  • Uncover casserole and sprinkle top with the toasted bread crumbs.
  • Bake for an additional 15 minutes.

10 oz broccoli, frozen
1/3 c vidalia onions, chopped
1/2 c mushrooms, sliced
2 tsp oil
1 c cheddar cheese, grated
2 large eggs, slightly beaten
1/2 c mayonnaise
1 c water
1 c rice, cooked
6 medium chicken breasts, boneless and skinless
3 tsp olive oil, extra virgin

Steps:

  • 1. Cook broccoli according to directions.
  • 2. Drain and set aside.
  • 3. Saute onions and mushrooms in 2 tablespoons of oil until limp.
  • 4. Drain, combine with broccoli and set aside.
  • 5. Combine cheese, eggs, mayonnaise, water and rice.
  • 6. Set aside.
  • 7. Brown chicken breasts in 3 tablespoons of oil.
  • 8. To Assemble: Combine broccoli mixture with cheese mixture and pour into greased, shallow baking pan.
  • 9. Place chicken breasts on top and sprinkle with paprika.
  • 10. Bake uncovered in a 350 oven for 45 minutes.
  • 11. NOTE- You may cut fat and cholesterol from this recipe with the following substitutions: light skim milk cheese for cheddar, 4 ounces of egg substitute for the 2 eggs, light mayonnaise for regular mayonnaise and non-fat cooking spray for browning chicken.

2 large vidalia onions [sliced thin]
1/2 c butter, room temperature
1/2 c sour cream
1/2 c grated parmesean cheese
1 c ritz crackers [crumbled] -or-
1 c french's french fried onions [crumbled]

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. Melt the butter in large skillet. Add seperated onion slices. Saute until soft.
  • 3. Remove from heat.
  • 4. Add sour cream.
  • 5. Mix thoroughly with spoon.
  • 6. Scoop 1/2 of the onion mixture into a small greased casserole dish.
  • 7. Top with 1/2 [1/4 cup] of the grated parmesean cheese.
  • 8. Layer with remaining onion mixture.
  • 9. Sprinkle on rest [1/4 cup] grated parmesean cheese.
  • 10. Spriknkle top with crumbled Ritz crackers or crumbled French fried onions.
  • 11. Bake for 30 minutes.
  • 12. Enjoy!
  • 13. Note: If you're on a date, bring your toth brush or mouth wash! Onion after-breath can kill a kiss!

30 crushed saltines
2 can(s) cream of mushrom soup
4 beaten eggs
1 c milk
2 c shredded sharp cheddar cheese
4 large vidalia onions, peeled and sliced

Steps:

  • 1. Melt butter in large pan; sautee onions until clear. Reserve 6 tablespoon of cracker crumbs for topping and place remaining crumbs in the bottom of lightly greased 9 X 13 inch pan.
  • 2. Remove onions from pan with slotted spoon. Add soup and onions in alternating layers until full. Combine eggs and milk, pour over onions. Top with cheese and remaining cracker crumbs. Bake at 350 for 20 to 30 minutes until brown and bubblyy.

Tips:

  • Use a mandoline slicer to thinly slice the onions evenly.
  • Don't overcrowd the pan when cooking the onions. Cook them in batches if necessary.
  • Cook the onions until they are caramelized and golden brown. This will take about 30 minutes.
  • Use a good quality cheddar cheese. A sharp cheddar will give the casserole a bolder flavor.
  • Serve the casserole hot out of the oven with a side of your favorite salad.
