Time 26m

Yield 4-6 serving(s)

Number Of Ingredients 14

1/4 cup molasses
1/4 cup chicken broth
2 tablespoons soy sauce
4 teaspoons cornstarch
1 tablespoon gingerroot, minced
1 teaspoon garlic, minced
1/8 teaspoon red pepper flakes
1 tablespoon canola oil
1 cup snow peas
1 cup purple cabbage, thinly sliced
1/4 cup onion, diced
2/3 cup carrot, shredded
1/4 cup water chestnut, sliced
1 cup zucchini or 1 cup yellow squash

Steps:

  • In a bowl, combine the molasses, broth, soy sauce, cornstarch, gingerroot, garlic, and red pepper flakes. Set aside.
  • Heat the oil in a wok or heavy skillet. Add the vegetables and stir fry for 2 minutes until crisp tender. (A skillet may take a bit longer).
  • Mix in the molasses mixture. Cook this until the sauce begins to thicken and the vegetables are coated.

Tips:

  • Prep your vegetables in advance: Cutting and dicing your vegetables ahead of time will save you time when you're ready to cook.
  • Use a large skillet or wok: This will help the vegetables cook evenly.
  • Don't overcrowd the pan: If you add too many vegetables at once, they will not cook evenly.
  • Stir-fry the vegetables over high heat: This will help them retain their crispness.
  • Add the sauce towards the end of cooking: This will prevent the sauce from burning.
  • Season the vegetables to taste: Salt, pepper, and garlic powder are all good options.
  • Serve the vegetables immediately: This is when they are at their best.

Conclusion:

This recipe for Very Quick Stir-Fry Vegetables with an Italian Flair is a delicious and healthy way to get your daily dose of vegetables. The vegetables are cooked quickly over high heat, which helps them retain their crispness and nutrients. The Italian-inspired sauce adds a flavorful touch to the dish. This recipe is perfect for a quick and easy weeknight meal, and it can also be served as a side dish or appetizer.
