This my version of a popular soup served at a well-known banquet facility in southeastern Massachusetts. It is simple to prepare using common ingredients you may already have on hand in your pantry and freezer. Feel free to vary the basic recipe with in-season fresh veggies and low-fat turkey or veggie-soy burger for the ground beef.

Tips:

  • Use fresh, ripe tomatoes for the best flavor. If you can, use homegrown tomatoes or tomatoes from a local farmer's market.
  • Roast the tomatoes before adding them to the soup. Roasting the tomatoes concentrates their flavor and gives the soup a smoky depth of flavor.
  • Don't overcrowd the pan when roasting the tomatoes. If you overcrowd the pan, the tomatoes will steam instead of roast.
  • Use a good quality olive oil. Olive oil is a key ingredient in this soup, so make sure to use a good quality oil that you enjoy the taste of.
  • Season the soup to taste. Add salt, pepper, and other seasonings to taste until the soup is flavorful and well-balanced.
  • Serve the soup with a dollop of yogurt or sour cream and a sprinkle of fresh herbs. This will add a creamy richness and a pop of flavor to the soup.

Conclusion:

Venus de Milo soup is a delicious and easy-to-make soup that is perfect for a quick and healthy meal. The soup is made with fresh, ripe tomatoes, roasted until they are smoky and flavorful. The tomatoes are then simmered in a broth made with olive oil, garlic, and onions. The soup is seasoned with salt, pepper, and other herbs and spices to taste. Venus de Milo soup can be served hot or cold, and it is a great way to enjoy the fresh flavors of summer tomatoes.
