Time 50m

Yield 6 serving(s)

Number Of Ingredients 12

1 1/2 lbs ground venison
1 medium onion, chopped
1 (16 ounce) can pork and beans, undrained
1 (16 ounce) can kidney beans, rinsed and drained
1 (15 1/2 ounce) can great northern beans, rinsed and drained
1 cup ketchup
1/3 cup packed brown sugar
6 slices cooked bacon, crumbled
2 tablespoons white vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon ground mustard

Steps:

  • In a large skillet, cook venison and onion over medium heat until meat is no longer pink; drain.
  • Stir in remaining ingredients.
  • Transfer to a 2-qt. baking dish.
  • Cover and bake at 350° for 35-40 minutes or until heated through.

Tips:

  • Choose the right venison cut: For this recipe, a lean cut like venison loin or backstrap is best. Avoid using tougher cuts like venison shoulder or shank.
  • Soak the beans overnight: This will help to reduce the cooking time and make the beans more tender. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
  • Brown the venison well: This will help to develop the flavor of the meat and prevent it from becoming tough.
  • Use a variety of vegetables: This will add flavor and nutrients to the dish. Some good options include carrots, celery, onions, and potatoes.
  • Season the dish to taste: Use your favorite herbs and spices to create a flavorful dish. Some good options include salt, pepper, garlic powder, and onion powder.

Conclusion:

Venison and beans is a hearty and flavorful dish that is perfect for a cold winter day. It is also a relatively inexpensive dish to make, making it a great option for budget-conscious cooks. With a little planning and effort, you can easily make a delicious venison and beans dish that your whole family will enjoy.
