FUDGE WALNUT PIE

Fudge Walnut Pie image

It's like creamy, dense, chocolatey fudge in a pie shell. A recipe of my Mothers that I tweaked a little bit and have made in almost every restaurant that I've been in. A favorite of the chocolate crowd, easy to make and lasts 2 weeks in the fridge after baking (but it'll never last that long!).

Time 55m

Yield 8 serving(s)

Number Of Ingredients 13

1 cup mini marshmallows
3 tablespoons unsalted butter
1/2 cup unsalted butter
3/4 cup sugar, plus
2 tablespoons sugar
6 tablespoons cocoa powder (I recommend Hershey's Special Dark)
2 eggs
4 tablespoons flour
1/4 teaspoon salt
1 tablespoon vanilla extract
1/2 teaspoon coffee extract (optional)
1/2 cup walnuts (coarsely chopped, can use pecans if desired)
1 (9 inch) unbaked pastry shells

Steps:

  • In a double boiler, melt the mini marshmallows with the 3 Tbl. butter. stirring occasionally until melted and smooth.
  • In a separate bowl, cream the 1/2 cup butter with the sugar until light and fluffy.
  • Add eggs, 1 at a time, beating well after each until smooth.
  • Add the cocoa powder and beat until smooth.
  • Add the melted marshmallow/butter mixture and beat until well combined.
  • Add the flour, salt, and extract(s) and beat until smooth.
  • Pour into 9" pie shell. The filling will only fill the shell about 1/2 way, but it rises during baking (and then falls a bit when cooled).
  • Sprinkle the walnuts over the top.
  • Bake at 350 degrees for about 30-40 minutes; until the edges are firm and the middle is set (a little more set than a cheesecake would be). Shield edge of pie crust with foil after 20 minutes, if needed, to prevent overbrowning.
  • Cool to room temperature and chill at least 4 hours; overnight is better. The flavor will intensify after a couple of days.
  • Serve with a dollop of whipped cream and sprinkle with shaved chocolate, if desired.

VELVETY WALNUT FUDGE PIE

Velvety Walnut Fudge Pie image

This is a very easy, but rich-tasting pie. The walnuts rise to the top to form a crunchy topping over the creamy filling. Garnish each slice with a dollop of whipped cream if you like.

1 cup chopped walnuts

½ cup semisweet chocolate chips
1 recipe pastry for a 9 inch single crust pie

  • Melt the chocolate chips.
  • In a large bowl, combine pie filling, evaporated milk, corn syrup, egg, melted chocolate chips. Stir in nuts. Pour into pie shell.
  • Bake at 375 degrees F (175 degrees C) for about 45 minutes; bake until top is firm and begins to crack. Cool at least 4 hours. Garnish with whipped cream if desired.

Tips:

  • Use high-quality walnuts. Fresh, plump walnuts will give your pie the best flavor. If you can, buy walnuts that are still in their shells and crack them yourself. This will ensure that you're getting the freshest nuts possible.
  • Toast the walnuts before using them. Toasting the walnuts will bring out their flavor and make them more fragrant. To toast the walnuts, spread them out on a baking sheet and bake them in a preheated 350°F oven for 5-7 minutes, or until they are golden brown and fragrant.
  • Use a good quality chocolate. The chocolate is one of the main ingredients in this pie, so it's important to use a good quality chocolate that you enjoy the taste of. I recommend using a semisweet or bittersweet chocolate.
  • Don't overcook the pie. The pie is done baking when the center is just set. If you overcook the pie, it will be dry and crumbly.
  • Let the pie cool completely before serving. This will give the pie time to set and firm up.

Conclusion:

This velvety walnut fudge pie is a rich and delicious dessert that is perfect for any occasion. The combination of chocolate and walnuts is a classic flavor combination that is sure to please everyone. This pie is also relatively easy to make, so it's a great option for busy cooks. If you're looking for a delicious and decadent dessert, this velvety walnut fudge pie is the perfect recipe for you.
