BROCCOLI, RICE, CHEESE, AND CHICKEN CASSEROLE

Broccoli, Rice, Cheese, and Chicken Casserole image

This is a delicious twist to broccoli, rice, and cheese casserole, and is VERY easy to make. You can also cut this in half. I use the 1 can cream of mushroom soup when I make half. You can also leave out the onion. It just gives it a little added flavor, but is still very good without it.

Time 40m

Yield 4 serving(s)

Number Of Ingredients 7

1 (16 ounce) bag frozen broccoli
1/2 cup onion
1 (10 1/4 ounce) can cream of celery soup (I use Recipe #425183) or 1 (10 1/4 ounce) can cream of chicken soup (I use Cream of Anything Soup Mix)
1 cup milk
1/2 lb Velveeta cheese
3 cups cooked rice (I use brown rice)
1/2 teaspoon pepper

Steps:

  • Spray a 2-quart baking dish with cooking spray and preheat oven to 350°F.
  • Saute onion until soft and translucent.
  • Cook broccoli in boiling water for about ten minutes or until almost tender; drain very well.
  • Mix all ingredients and place in baking dish.
  • Bake for 25 minutes.

Tips:

  • Use fresh ingredients for the best flavor. Velvety cheese, vibrant broccoli florets, and tender chicken will make your casserole shine.
  • Don't overcook the chicken. It should be cooked through but still juicy. Overcooked chicken will be dry and tough.
  • Use a good-quality rice. A long-grain rice, such as basmati or jasmine, will give you the best results. Short-grain rice, such as arborio or sushi rice, will be too sticky for this casserole.
  • Don't skimp on the cheese. Velveeta is the key ingredient in this casserole, so be generous with it. A good rule of thumb is to use 1 cup of Velveeta per 1 pound of cooked chicken.
  • Add your favorite seasonings. This casserole is a great opportunity to experiment with different flavors. Try adding garlic powder, onion powder, paprika, or cayenne pepper to taste.
  • Serve the casserole hot and bubbly. This casserole is best enjoyed fresh out of the oven. Leftovers can be stored in the refrigerator for up to 3 days, but they will lose some of their creaminess.

Conclusion:

Velvety cheese, tender chicken, fluffy rice, and vibrant broccoli come together in this hearty and flavorful casserole. It's a quick and easy meal that's perfect for busy weeknights. Plus, it's a great way to use up leftover chicken. Serve this casserole with a side of salad or roasted vegetables for a complete meal.
