3 cups broccoli florets
2 tablespoons salted butter
1 small onion, diced
1 celery stalk, diced
1 clove garlic, minced or pressed
1 (10.5 ounce) can condensed cream of mushroom soup, NOT diluted
⅛ teaspoon paprika
⅛ teaspoon dry mustard
Pinch of ground nutmeg
1 ½ cups grated sharp cheddar cheese, divided
1 cup 2% or whole milk
3 cups cooked long-grain white rice
Kosher salt and black pepper
1 cup lightly crushed Ritz crackers

Steps:

  • Cook the broccoli for about 2 minutes in boiling water, just until crisp-tender. Drain and set aside.
  • Preheat oven to 350°F. Grease an 8-inch square baking dish; set aside.
  • In a large skillet or Dutch oven, melt butter over medium-high heat. Add onion and celery; cook, stirring occasionally, until the onion is translucent, about 5 minutes. Add garlic; cook until fragrant, about 30 seconds.

Everyone has loved making this dish because it is so easy and everyone goes back for seconds and thirds!

1 (16 ounce) bag frozen broccoli
1/2 a box of 16oz Ritz cracker
3/4 lb Velveeta cheese
1/2 cup butter

Steps:

  • Cook broccoli and drain water.
  • Add Velvetta and cook until melted.
  • In a seperate pan melt butter, then remove from heat.
  • Add crumbled Ritz crackers to the butter and stir until mixed well.(You can crumble the crackers by hand or by putting them in a storage bag and crush with a rolling pin).
  • Spray a 1 3/4 quart cassarole dish with cooking spray.
  • Spoon in half the crackers into the dish.
  • Pour broccoli and cheese mixture in and cover with the rest of the crackers.
  • Bake for 15-20 minutes uncovered at 350 degrees or until top browns.

1 lb velveeta cheese
2 c cooked white rice
1 can(s) cream of mushroom soup
1 onion to taste
chopped celery to taste
