1 3/4 lb asparagus, fresh (organic)
1 1/2 Tbsp olive oil, extra virgin (organic)+for drizzle
2 Tbsp butter (organic irish)
1 small onion, small (organic chopped)
1 celery rib (organic chopped)
1 sprig(s) thyme, leaves(stripped from sprig)
3 c chicken stock or vegetable stock (hot)
1/2 tsp freshly grated nutmeg
2/3 c heavy whipping cream (organic)
lemon juice, fresh (organic) opt squeeze

  • 1. Sort out 12 most attractive spears, cut off the tips to use for garnish. Roughly chop the rest and set aside.
  • 2. Heat olive oil and 1/2 the butter in a large pot and add the chopped onion, chopped celery, and a seasoning of salt and pepper. Cook, stirring frequently with wooden spoon, till vegetables begin to soften, 4-6 min. Add the chopped asparagus and the thyme, and nutmeg, and stir over high heat until asparagus is tender but stillvibrant green, 3-4 min. Pour in just enough stock (chicken or vegetable) to cover and simmer for 2 min. Remove from heat.
  • 3. Blend soup while it is still hot. Place 1/2 the vegetables in a food processor or blender using a slotted spoon, add 1 or 2 ladles of hot stock, and puree well, pour through a strainer or seive and repeat till all is complete. Discard pulp....Stir in remaining stock stirring in till well blended you will have a creamy consistency. Taste and adjust the seasoning if needed, add a little lemon juice if you like, do not over season, especially if you are serving cold...
  • 4. When ready to serve add the cream, as not to scortch, just to a simmer. Meanwhile, saute the asparagus tips in the remaining butter with someseasoning in a hot frying pan or saute pan. Add a splash of water, cover the pan, and let the asparagus steam until just tender, 2-3 min.
  • 5. Pour soup into warm bowls garnish with asparagus tips. Drizzle with a little olive oil over the top and serve immediately.

4 cups fresh mushrooms, sliced
1/2 cup flour
2-14.5 oz cans chicken broth
1/2 pound boneless skinless chicken breasts
2 t fresh rosemary, chopped
1 tub philadelphia savory garlic cooking cream

3 slices bacon, cooked and crumbled (optional)

Steps:

  • 1. MELT butter in large saucepan. Add mushrooms; cook and stir 5 to 6 min. or until tender. Stir in flour; cook on low heat 15 min., stirring frequently. Meanwhile, heat broth in medium saucepan on medium heat. Add chicken; cook 6 to 7 min. or until done (165ºF). Remove chicken from broth; set aside.
  • 2. ADD broth gradually to mushrooms, stirring constantly; cook on medium heat 5 min. or until broth is thickened, stirring frequently. Chop chicken. Add to soup. Stir in cooking creme and rosemary; cook 2 to 3 min. or until heated through, stirring frequently. Season with salt and pepper.

3/4 cup (12 tablespoons) sugar
1/4 cup fresh Meyer lemon juice* (from 1 medium lemon)
2 teaspoons powdered gelatin (from 1 -1/4-ounce envelope)
1 tablespoon finely grated Meyer lemon zest* (from 2 medium lemons)
1/8 teaspoon salt
For dough
1 1/2 cups all-purpose flour
1/2 cup sugar
1/2 teaspoon salt
7 tablespoons cold, unsalted butter, cut into 1/2-inch cubes
4 large egg yolks
1/2 teaspoon pure vanilla extract
To bake
1/2 cup confectioners' sugar
For chocolate velouté
1 cup heavy cream
1 1/2 cups (9 ounces) high-quality milk chocolate such as Valrhona, coarsely chopped
4 1/2 teaspoons sugar
2 teaspoons fresh Meyer lemon juice* (from 1/2 lemon)
1/2 teaspoon fresh lemon thyme** leaves, minced

Steps:

  • Make Chiboust:
  • In 3-quart pot over moderate heat, bring milk and cream to boil. In medium bowl, whisk together egg yolks, cornstarch, and 1 tablespoon sugar. Gradually whisk hot milk and cream mixture into egg-yolk mixture, then return mixture to pot. Reduce heat to low and cook, whisking constantly, until mixture becomes thick and smooth, about 2 minutes. Strain custard, pressing on solids, through fine-mesh strainer into large bowl.
  • Place lemon juice in small bowl. Sprinkle gelatin over juice and let stand 1 minute to soften, then stir until dissolved, about 1 minute. Stir lemon juice mixture and lemon zest into custard, press plastic wrap onto surface of custard, and let cool at room temperature.
  • In small saucepan, stir together 3/4 cup water and remaining 11 tablespoons sugar. Clamp on candy thermometer and set over moderate heat. Simmer, uncovered and undisturbed, until thermometer registers 235°F, 10 to 12 minutes. While syrup is simmering, in large bowl using electric mixer, beat egg whites and salt just until soft peaks begin to form, about 3 to 4 minutes. With mixer running, slowly and carefully pour hot syrup into egg whites, then continue to whip until meringue thickens, becomes glossy, and holds soft peaks, about 6 to 8 minutes.
  • When custard has cooled, gently fold in meringue. Divide Chiboust evenly among 12 silicone muffin cups and freeze until firm, at least 4 hours and up to 24 hours.
  • Make dough:
  • In large bowl, whisk together flour, sugar, and salt. Using pastry blender or fingertips, blend in butter until mixture resembles coarse meal with some small (roughly pea-size) butter lumps. In small bowl, whisk together yolks and 1 tablespoon ice water, then drizzle over flour mixture and stir with fork until just combined. With floured hands, gently knead mixture until dough forms. Turn dough out onto lightly floured surface and gently knead until smooth, 4 to 5 times. Form dough into ball, then flatten into 5-inch disk. Wrap tightly in plastic and chill until firm, 30 minutes to 1 hour.
  • On 13- by 18-inch piece of parchment, lightly dusted with flour, roll out dough to 1/4-inch-thick-round (about 12 to 13 inches in diameter). Transfer parchment and dough to sheet pan, then cover with plastic and chill in refrigerator 30 minutes.
  • Bake Chiboust:
  • Preheat oven to 350°F.
  • Remove dough from refrigerator. Using 3-inch round cookie cutter, cut out 12 rounds and place on large baking sheet. Remove Chibousts from freezer, unmold, and place one on each dough round. Sift confectioners' sugar over and bake until Chibousts are puffy and thin crust has formed on top, about 20 minutes.
  • While Chibousts are baking, make chocolate velouté:
  • In large saucepan over moderate heat, bring cream to boil. Remove pan from heat and add chocolate, whisking until chocolate is melted and mixture is smooth.
  • In one-quart pot over moderate heat, heat sugar and 1 1/2 tablespoons water, whisking constantly, until sugar dissolves, about 2 to 3 minutes. Pour syrup over chocolate and whisk until smooth, about 2 to 3 minutes. Whisk in lemon juice and thyme. Keep warm.
  • Assemble:
  • Remove Chibousts from oven. Using blowtorch, brown top of each by moving flame evenly back and forth over top until golden brown, about 1 to 2 minutes. Drizzle each Chiboust with 2 tablespoons chocolate velouté and serve warm.

2 shallots, finely chopped
3 tablespoons flour
3 cups unsalted fish stock
3 cups unsalted chicken stock
3/4 teaspoon sea salt, plus more to taste
1 1/2 cups shucked oysters, including liquor
Pinch cayenne pepper
3 large egg yolks
1 cup heavy cream
Few drops fresh lemon juice
3 tablespoons black caviar

Steps:

  • In a saucepan, melt the butter and soften the shallots but do not brown. Blend in the flour and cook over low heat, stirring often, for 10 minutes. (The roux should be smooth and golden.) In another saucepan, combine and warm the stocks. Gradually add stocks to the roux, stirring constantly, and bring to a boil. Reduce heat and simmer 20 minutes, skimming off any scum that forms on the top. Add the salt.
  • Strain oysters and reserve their liquor. Purée oysters in a food processor or blender and add them with their liquor to the soup. Simmer, partly covered, for 5 minutes, then add cayenne. Strain through a fine sieve, pressing hard with a spoon. (Soup may be prepared ahead to this point.)
  • About 5 or 10 minutes before serving, reheat the soup. Whisk yolks and cream together. Slowly whisk in a cup of the hot soup, then stir the cream mixture back into the soup. Stir constantly over low heat, until soup thickens slightly. Bring almost to the boil and remove from heat. Add lemon juice and taste for seasonings. Ladle into serving bowls and top each with about a teaspoon of caviar.
