Provided by Realtor by day

Categories     Potato

Time 1h15m

Yield 2 serving(s)

Number Of Ingredients 10

2 large baking potatoes, scrubbed and pricked
3 small yellow squash, coarsely chopped (1 1/4 lb)
1/4 lb small mushroom, sliced
1 medium onion, chopped
1 -2 garlic clove, minced
1 tablespoon butter
1/4 cup milk
2 tablespoons butter
1/4 teaspoon salt
1/2 cup shredded cheddar cheese (or mozzarella)

Steps:

  • Preheat oven to 425. Bake potatoes until fork tender, about 50 to 60 minutes.
  • Meanwhile, saute the squash, mushrooms, garlic and onions in 1 tablespoons butter until tender, about 10-15 minutes.
  • Scoop insides out of potatoes, whip with milk, 2 tbsp butter, salt and then stir in cheese.
  • Refill potato shells. Place on plates and mound the saute'd veggies over the top. Serve immediately.

Tips:

  • Baking potatoes should be about the same size to ensure even cooking.
  • Pricking potatoes with a fork allows steam to escape while baking, preventing them from bursting.
  • Rubbing olive oil helps the skins crisp up and enhances the flavor of the potatoes.
  • For a softer, more tender potato, wrap each potato in aluminum foil before baking.
  • Toppings can be added before or after baking, depending on personal preference.
  • Using fresh, high-quality vegetables ensures the best flavor in the stuffing.
  • For a vegetarian version, omit the bacon and use vegetable broth instead of chicken broth.
  • Leftover stuffed potatoes can be stored in the refrigerator for up to 3 days or frozen for up to 1 month.

Conclusion:

Veggie-stuffed baked potatoes are a delicious and versatile dish that can be enjoyed for lunch, dinner, or even as a snack. With their crispy skins, fluffy interiors, and flavorful fillings, they are sure to be a hit with everyone. Whether you prefer classic toppings like butter and sour cream, or more adventurous options like roasted vegetables or pulled pork, there are endless possibilities for customization.
