WALNUT SAUSAGE PATTIES
Steps:
- In a food processor, pulse the nuts to a coarse crumb. Add the oats, maple syrup, brown sugar, sage, thyme, salt, rosemary, cayenne, nutmeg, red pepper, eggs and some black pepper and continue to pulse just until the mixture comes together into a thick batter. There should still be some coarse bits of oats and walnuts.
- Heat a generous layer of oil in a skillet over medium-high heat. Dollop 2 tablespoons of batter per patty into the skillet, allowing at least 1 inch between patties, flatten them slightly and cook until golden brown on the bottom, about 4 minutes. Flip and cook until golden brown on the other side, another 4 minutes. Transfer to a plate lined with a paper towel to soak up excess oil. Repeat with the remaining batter.
TVP VEGGIE SAUSAGE PATTIES
After experimenting with TVP (textured vegetable protein) for some time, i came up with this recipe. This "sausage" can be used in a variety of ways. I think its the most convincing sausage substitute i've ever tried. The spices can be altered to make it more Italian by adding fennel and italian herbs.

- Preheat oven to 400. Boil water and add seasonings. Combine TVP, flour and vital wheat gluten. Add broth to dry ingredients. Lightly oil muffin pan, and fill bottoms of cups with about 1/2" of mixture. Bake in 400 degree oven about 10-12 minutes until firm. When ready to use, fry until brown on both sides, or crumble for use in recipes. Makes 12-14 patties.

Steps:
- Boil water and add TVP, let sit 5 minutes.
- Measure dry ingredients in a bowl, stir to mix.
- Add TVP, mix well.
- Measure all liquid ingredients in a measuring cup (I use the one that had tvp in it.) Stir well. If you use warm water, the molasses and syrup mix better.
- Add wet to dry, stir well. If it's still sticky, stir in 1-2 tablespoons extra whole wheat flour.
- Shape in 2 inch balls.
- Heat oil over medium heat, and add sausage balls, flattening as desired. (Mom likes them fat, I like them thin.) Cook about 2 minutes per side.
- Freeze leftovers.
Tips:
- Choose high-quality ingredients: Use fresh vegetables, flavorful herbs, and spices to create patties that are packed with flavor.
- Don't overmix the veggie mixture: Overmixing can result in tough patties. Mix just until the ingredients are well combined.
- Form the patties evenly: Use a measuring cup or spoon to ensure that the patties are all the same size and shape. This will help them cook evenly.
- Cook the patties over medium heat: Cooking the patties over medium heat will help them cook through without burning.
- Flip the patties only once: Flipping the patties too often can break them up. Flip them only once, when the edges are cooked and the bottom is golden brown.
- Let the patties rest before serving: Letting the patties rest for a few minutes before serving will help them firm up and retain their juices.
Conclusion:
Veggie sausage patties are a delicious and versatile plant-based protein option. They can be enjoyed on their own, added to sandwiches, salads, or wraps, or used as a filling for tacos or burritos. With a variety of recipes to choose from, there's sure to be a veggie sausage patty that everyone will enjoy.
