CALIFORNIA GRILLED VEGGIE SANDWICH
I came up with this recipe to entertain friends. Since I am a semi-vegetarian and love to BBQ, I am always inventing something new. The first time I made this, my meat-lover friends raved about this dish! I prefer mesquite coals over gas barbeques...however, either works fine.

Steps:
- In a bowl, mix the mayonnaise, minced garlic, and lemon juice. Set aside in the refrigerator.
- Preheat the grill for high heat.
- Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill, and set aside.
- Spread some of the mayonnaise mixture on the cut sides of the bread, and sprinkle each one with feta cheese. Place on the grill cheese side up, and cover with lid for 2 to 3 minutes. This will warm the bread, and slightly melt the cheese. Watch carefully so the bottoms don't burn. Remove from grill, and layer with the vegetables. Enjoy as open faced grilled sandwiches.

THE BEST VEGGIE SANDWICH
A local restaurant used to serve a version of this sandwich but when they discontinued it, I experimented and made it better with the addition of dry roasted sesame seeds and using English Muffins instead of whole wheat bread. Garnish each with a black olive, if desired.

VEGEMITE SANDWICH TRADIONAL (VEGGIE SANGER)
I can't believe a traditional "Veggie Sanger" has not been posted! "No Worries Mate"................ I am here to fix that! Vegemite sandwiches are terrific for school lunches, and used to be an Aussie Tradition, not so long ago but not so sure about now. Vegemite is high in Vitamin B .....but it is quite salty so it probably not considered a health food as such because of the saltiness. But they do not go soggy like a lot of sandwich's do at school! A Vegemite sandwich is a quick and easy snack for both kids and adults. All you will need is bread and butter or margarine .......and of course that jar of black gold "Vegemite! " Of course you can add things if you prefer, like cheese or avocado! Even use crumpets instead of bread, for an amazing snack. Come be an "Happy Little Vegemite!"

Steps:
- Butter, one side of two slices of any of your preferred type of bread.(Wholemeal or wholegrain bread if you like) but tradition was white bread is the when I was young!
- Spread a thin layer of Vegemite on top of the butter -- (thin is better as Vegemite goes a long way).
- If using added toppings place them top of the layer of Vegemite.
- Place the two pieces of bread together, cut sandwich in half and enjoy your Vegemite sanger!

MEDITERRANEAN VEGGIE SANDWICH
This could be a copy cat recipe for Panera Bread's Mediterranean Veggie Sandwich, however, this is a little lower in calories and fat with the few changes I've done. I suggest using a dense thicker bread for this sandwich, it holds up better. You can substitute your favorite flavor of hummus.

VEGGIE PITA SANDWICH
This sandwich was my favorite on the menu at a deli on Williamson Road in Roanoke, VA in the early 90's. I cannot remember the name of the place or what they called this sandwich. I don't know if it is still there or not, as I only lived there 2 years, but I still make it today. It was served with potato chips and a pickle. Sweet potato chips or potato salad are good, too. Do not let the list of ingredients scare you off. I have substituted others or omitted some when needed.

- Add spinach and lettuce leaves (uncut).
- Add remained sliced veggies, oil and vinegar.
- Fold in half and serve.
- NOTE: Do not add salt, as the cheese adds a sense of saltiness.

VEGGIE DELIGHTFUL SANDWICH à LA SUBWAY
My sandwich of choice from Subway. This is my homegrown version with the addition of avocado! For the bread I used recipe #141038 and by special request recipe #67854 (onion sauce) to top it all off. I don't make these as often as I should, but when I do, the sandwiches are served with fresh fruit in season and a small bag of multi-grain SunChips. Hubby and I always fight over the last SunChip! Note: omit the red onion slices if using the onion sauce.

Steps:
- 1. First, make my herb garlic cream cheese spread found in my recipe box. If you want to buy some, it's hard to find in grocery stores but bagel shops will probably carry it.
- 2. dice some tomatoes, chop some onions and red peppers. I usually mix all these in a food processor. The amount you use depends on your preference and how many sandwiches you are making.
- 3. Lightly toast an everything bagel.
- 4. Spread cream cheese on one half.
- 5. Put mixture of red pepper/onion/tomatoes on top of cream cheese.
- 6. Put slice of muenster cheese on top.
- 7. Top with alfalfa sprouts.
- 8. Put the top of the bagel on, slice in half and enjoy! I like to microwave my finished sandwich a little to soften up the cheese, but some prefer this sandwich cold.

VEGGIE SANDWICH
I know this is pretty simple, but its so good, especially served with a small bowl of vegetable soup, or a salad of baby greens with a vinaigrette. This is a 'staple' sandwich, 'cause its made with stuff most people usually have on hand. Its also good with freshly grated parmesan over the tomatoes.
