I made up this recipe many years ago, because I loved the corn dogs you buy at carnivals but could not find a recipe for them. Great served with mustard.

VEGETARIAN CORN DOG CASSEROLE

Vegetarian Corn Dog Casserole image

This casserole tastes just like a corn dog, only better, thanks to the addition of cheese, celery, green onions, and spices. This is a very tasty, kid-friendly dish. Since we became vegetarians, we use veggie hot dogs instead of meat in the recipe. The recipe makes 12 servings, but you can cut the recipe down to the size you need.

  • Shred the vegetables finely. This will help them to cook evenly and will also prevent them from falling out of the cornbread batter.
  • Season the vegetables well. Use a variety of herbs and spices to create a flavorful filling.
  • Make sure the cornbread batter is thick enough. It should be thick enough to coat the vegetables evenly, but not so thick that it's difficult to stir.
