**Vegetarian Potato Au Gratin: A Creamy, Cheesy, and Flavorful Casserole**

Potato au gratin is a classic French dish that is typically made with thinly sliced potatoes, cream, cheese, and butter. This vegetarian version of potato au gratin is just as delicious and comforting as the traditional recipe, but it uses vegetable broth instead of cream and a variety of cheeses to create a rich and flavorful sauce. The potatoes are sliced thinly and then layered in a baking dish with the cheese sauce. The casserole is then baked until the potatoes are tender and the cheese is melted and bubbly. This vegetarian potato au gratin is a perfect side dish for a holiday meal or a weeknight dinner. It is also a great way to use up leftover potatoes.

**3 Ways to Elevate Your Vegetarian Potato Au Gratin:**

1. **Use a Variety of Cheeses:** Don't be afraid to mix and match different types of cheeses to create a unique and flavorful sauce. Some good options include Gruyère, cheddar, Parmesan, and mozzarella.
2. **Add Some Herbs or Spices:** A little bit of thyme, rosemary, or garlic powder can add a lot of flavor to your potato au gratin.
3. **Top with Breadcrumbs or Croutons:** A crispy topping of breadcrumbs or croutons adds a nice contrast to the creamy potato and cheese filling.
