This meatloaf has a lot of flavor and is very satisfying if you are craving protein. My husband and I, both vegetarians, made this for my brother, a hunter and meat-enthusiast, and he really liked it. The best thing about this meatloaf is the next day when I can have a cold meatloaf sandwich with mayonnaise.

1 (12 ounce) package firm tofu, drained and cubed
2 eggs
1 (1.25 ounce) envelope dry onion soup mix
1 tablespoon soy sauce
¾ cup chopped walnuts
1 teaspoon olive oil
1 (8 ounce) package sliced fresh mushrooms
1 small onion, chopped
2 stalks celery, chopped
1 ½ teaspoons dried oregano
1 ½ teaspoons dried basil
½ teaspoon dried sage
1 ½ cups dry bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a loaf pan with cooking spray.
  • Place tofu, eggs, onion soup mix, and soy sauce into a food processor or blender; process until combined. Add walnuts and puree until smooth. Transfer tofu mixture to a large bowl.

2 large onions, finely chopped
1 cup chopped fresh mushrooms
1/4 cup finely chopped green pepper
2 tablespoons butter
3 cups grated carrots
1-1/2 cups chopped celery
5 eggs, beaten
1/2 cup chopped walnuts
1/4 cup unsalted sunflower kernels
1/2 teaspoon salt
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon pepper
3 cups soft whole wheat bread crumbs (about 6 slices)

Steps:

  • In a nonstick skillet, saute onions, mushrooms and green pepper in butter until tender. In a bowl, combine the mushroom mixture, carrots, celery, eggs, walnut, sunflower kernels, salt, basil, oregano and pepper. Stir in bread crumbs:, Coat a 9x5-in. loaf pan with cooking spray, then line with waxed paper. Transfer vegetable mixture to a prepared pan. Bake at 350° for 1 hour or until a thermometer reads 160°. Let stand for 10 minutes before slicing.

8 cups carrots, pulp or 8 cups carrots, finely grated
1 cup fresh lima beans, green can be frozen
2 large onions, finely chopped
10 egg yolks
2 tablespoons parsley, finely chopped
1 cup cashew nuts, broken
1 cup almonds, finely flaked
6 tablespoons butter, melted
3 teaspoons vegetable salt
2 1/2 teaspoons sage
2 teaspoons thyme

Steps:

  • Mix grated carrots and other vegetables together in large bowl. Squeeze some of the juice from the grated carrots into the egg yolks, add salt and spices and beat thoroughly then mix with the vegetables. Add nuts and melted butter and mix thoroughly.
  • Bake in greased Pyrex loaf pan in moderate oven until done, about 1 hour. Serve on plates in slices just thick enough to hold together.

1 onion, finely chopped
1 leek, thinly sliced
2 sticks celery, finely chopped
225 g mushrooms, sliced
2 garlic cloves, crushed
425 g lentils, drained
1 cup walnuts, finely chopped
50 g flour
50 g cheese, grated
1 egg, medium size
salt & pepper, to taste
fresh herb, a handful chopped
