Time 20m

Number Of Ingredients 23

2 teaspoons olive oil
1/2 medium yellow onion (diced) (about 1 cup)
1 teaspoon dried oregano
1/4 teaspoon kosher salt + more to taste
1/8 teaspoon freshly ground black pepper + more to taste
3 medium cloves garlic (peeled and minced)
2 teaspoons ground cumin
2 cups low-sodium vegetable broth*
1 (15-ounce) can cannellini beans, rinsed
1 (15-ounce) can navy beans, rinsed
1 15-ounce can chickpeas, rinsed
1 4-ounce can diced green chiles
1/4 teaspoon ground cloves
1/8-1/4 teaspoon ground (cayenne red pepper) (use less for less heat)
Juice of 1 medium lime
Fresh cilantro
Lime wedges to squeeze over the top
Sliced scallions
Diced onions
Grated cheese or vegan cheese
Diced avocado
Sour cream or cashew sour cream
A dash or two of Green Tabasco

Steps:

  • Set a medium-to-large pot over low heat. Add the olive oil, onion, oregano, 1/4 teaspoon salt, and 1/8 teaspoon pepper. Cook the onion, stirring occasionally, until soft and translucent, about 8 minutes.
  • Add the garlic and cumin. Cook, stirring frequently, for another minute.
  • Add the broth, beans, chiles, cloves, and cayenne. Stir to combine. Increase heat to medium-high and bring to a boil. Reduce to a simmer and cook for 3-5 more minutes until thickened a tiny bit.
  • Remove from heat. Run a potato masher or fork through 5-6 times just to smash a few of the beans and help thicken it all up. Squeeze the lime over the top and stir. Taste and add additional salt and pepper if desired.
  • Serve with assorted toppings if desired. I'm partial to this vegan cashew sour cream - yum!

Yield Makes 4 main-course servings

Number Of Ingredients 14

1/4 cup olive oil
2 cups chopped onions
1 2/3 cups coarsely chopped red bell peppers (about 2 medium)
6 garlic cloves, chopped
2 tablespoons chili powder
2 teaspoons dried oregano
1 1/2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
3 15- to 16-ounce cans black beans, drained, 1/2 cup liquid reserved
1 16-ounce can tomato sauce
Chopped fresh cilantro
Sour cream
Grated MontereyJack cheese
Chopped green onions

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onions, bell peppers, and garlic; sauté until onions soften, about 10 minutes. Mix in chili powder, oregano, cumin, and cayenne; stir 2 minutes. Mix in beans, 1/2 cup reserved bean liquid, and tomato sauce. Bring chili to boil, stirring occasionally. Reduce heat to medium-low and simmer until flavors blend and chili thickens, stirring occasionally, about 15 minutes. Season to taste with salt and pepper.
  • Ladle chili into bowls. Pass chopped cilantro, sour cream, grated cheese, and green onions separately.

Tips:

  • Soak the hominy: Soaking the hominy overnight or for at least 4 hours will help to soften it and reduce the cooking time.
  • Use a variety of beans: This recipe calls for black beans, pinto beans, and kidney beans, but you can use any type of beans that you like. Just be sure to use the same amount of beans total.
  • Add some vegetables: This recipe also calls for diced tomatoes and onions, but you can add any other vegetables that you like. Some good options include corn, bell peppers, and zucchini.
  • Season to taste: The amount of chili powder, cumin, and salt that you add to this recipe will depend on your personal preferences. Start with a small amount and add more to taste.
  • Serve with your favorite toppings: This chili is delicious served with shredded cheese, sour cream, avocado, and cilantro.

Conclusion:

This vegetarian hominy chili with beans is a hearty and flavorful dish that is perfect for a cold winter day. It is also a great way to use up leftover beans and vegetables. So next time you are looking for a vegetarian chili recipe, give this one a try. You won't be disappointed!
