VEGETARIAN MOROCCAN HARIRA

Vegetarian Moroccan Harira image

Harira is a famous Moroccan soup, and here's a hearty vegetarian (and vegan!) version - packed with tomatoes and chickpeas and flavored with paprika, turmeric, saffron, ginger, and harissa. The amount of water can be adjusted depending on the thickness you want. I like this soup pretty thick and nourishing, so I do not add too much water.

2 tablespoons vegetable oil
1 large onion, chopped
2 pounds tomatoes, diced
1 (15 ounce) can chickpeas, drained
1 bunch fresh cilantro, chopped
1 bunch fresh parsley, chopped
20 fresh mint leaves, chopped
1 teaspoon ground paprika
1 teaspoon ground turmeric
1 teaspoon ground ginger

1 pinch saffron threads
4 cups water, or more to taste
1 tablespoon all-purpose flour

  • Heat oil in a large pot over medium heat and cook onion until soft and translucent, about 5 minutes. Add tomatoes, chickpeas, cilantro, parsley, mint, paprika, turmeric, ginger, harissa, and saffron. Add water and cook over medium heat until flavors have combined, about 30 minutes.

VEGETARIAN HARIRA

Vegetarian Harira image

Harira is the Moroccan soup served daily to break the sunrise-to-dusk fasting period during the month of Ramadan, the Muslim holiday. This vegetarian version offers a healthier option to those who chose to not eat meat. You can also add a small amt of pasta, such as angel hair or vermicelli broken into small pieces, if you wish.

Time 1h10m

Yield 8 serving(s)

Number Of Ingredients 19

1 teaspoon olive oil
1 3/4 cups yellow onions, diced
1 garlic clove, minced
2 cups water
2 cups vegetable broth
1/2 cup dried lentils
1/2 cup tomato puree
3/4 teaspoon kosher salt
1 teaspoon ras el hanout spice mix
1 teaspoon turmeric
1 teaspoon sweet paprika
1/8 teaspoon fresh ground black pepper
1/2 cup frozen lima beans, thawed
1/3 cup celery, minced
1/4 cup fresh cilantro, coarsely chopped
1/4 cup fresh parsley, coarsely chopped
1 teaspoon tomato paste
1 (15 ounce) can garbanzo beans, rinsed and drained
8 lemon wedges

Steps:

  • In a large pot, heat the oil and saute the onions and garlic until onions are translucent (5 minutes). Add the next 9 ingredients and bring to a boil. Cover, reduce heat, and simmer 20 minutes. Stir in beans and next 5 ingredients (through garbanzo beans) and bring to a boil. Cover, reduce heat, and simmer 20 minutes or until vegetables are tender. Serve with lemon wedges.

Tips:

  • Soak the lentils and barley: Soaking the lentils and barley overnight or for at least 4 hours will help them cook more quickly and evenly.
  • Use a large pot: Harira is a hearty soup, so you'll need a large pot to make it. A 6-quart or larger pot is ideal.
  • Don't overcrowd the pot: When adding the vegetables and lentils to the pot, don't overcrowd it. If the pot is too crowded, the vegetables will not cook evenly.
  • Season to taste: Harira is a flavorful soup, but you may need to adjust the seasonings to your liking. Add more salt, pepper, or cumin as desired.
  • Serve with your favorite toppings: Harira is traditionally served with a dollop of yogurt, a squeeze of lemon juice, and a sprinkling of fresh herbs. You can also serve it with pita bread or crusty bread.

Conclusion:

Harira is a delicious and hearty soup that is perfect for a cold winter day. It is also a great way to use up leftover vegetables. With its combination of lentils, barley, vegetables, and spices, harira is a nutritious and satisfying meal. So next time you're looking for a vegetarian soup recipe, give harira a try. You won't be disappointed!
