2 tablespoons olive oil
1/2 yellow onion, finely chopped
2 cloves garlic, finely chopped
1 yellow squash, diced
1 zucchini, diced
Kosher salt and freshly ground pepper
Pinch of red pepper flakes
1 (28-ounce) can crushed tomatoes
1 (15-ounce) can tomato sauce
Pinch of sugar, optional
1 (15-ounce) container part-skim ricotta cheese
1 (16-ounce) bag frozen chopped spinach, thawed and squeezed dry
7 ounces store-bought pesto
1 box no-boil lasagna noodles
2 cups shredded part-skim mozzarella cheese
1/4 cup grated Parmesan
Fresh basil, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook, stirring, until softened, about 4 minutes. Add the yellow squash and zucchini and cook, stirring, for 4 to 5 minutes more. Season with salt, pepper and red pepper flakes. Stir in the crushed tomatoes and tomato sauce; bring to a simmer. Cook, stirring occasionally, about 20 minutes. Add salt, pepper and a pinch of sugar, if necessary.
  • In a large bowl, mix together the ricotta cheese, spinach, pesto and season with pepper.
  • Grease the bottom and sides of your lasagna dish with butter. Spread a little of the tomato sauce on the bottom of the pan. Lay 4 noodles across the bottom of the baking dish, overlapping by 1/2-inch. Spread 1/3 of the ricotta and pesto mixture evenly on top. Sprinkle with about a 1/2 cup mozzarella cheese. Ladle about 1 cup of sauce on top. Repeat layering in the same order. Layer the top layer of noodles and drizzle with the remaining sauce, then sprinkle with the Parmesan and remaining mozzarella. Cover with foil and bake in the center of the oven until the sauce is bubbling around the edges, about 40 minutes. Uncover and bake 5 minutes more. Let stand 10 minutes before slicing.

1 medium onion (chopped fine)
4 -5 minced fresh garlic cloves (more if you want)
185 g green pesto sauce
1/3 cup blue cheese
6 -8 mushrooms (chopped)
1 medium courgette (chopped)
1 red pepper (chopped)
1 green pepper (chopped)
1 small head broccoli (chopped)
4 cups chopped tomatoes
1/2 cup sweet corn
1/3 cup grated cheddar cheese (for topping)
5 tablespoons capers
5 tablespoons sun-dried tomatoes (chopped)
5 tablespoons pitted olives (chopped)
200 g lasagna sheets

Steps:

  • Fry the onion and garlic for 4-5 minutes.
  • Add all vegetables and cook 10 minutes.
  • Add tinned tomatoes and sweet corn.
  • Add crumbled blue cheese, pesto, capers, olives and sun dried tomatoes.
  • Mix well --that's your sauce!
  • Layer in a lasagna dish -- sauce, lasagna, sauce, lasagna, sauce and finish with grated cheese. Done in the oven 180c for around 30 minutes!

There is no mozzarella in this non-traditional lasagna that will have your guests waiting for the recipe handout. (Have it ready!) I have the habit of making way too much lasagna, so this recipe is perfect for keeping my portions under control for our now-empty nest with minimal leftovers. I believe this would work well in a slow cooker, but haven't tried it yet. Don't be afraid of the blue cheese flavor overpowering this recipe - it doesn't!

½ pound ground beef
½ pound lean ground pork
1 (24 ounce) jar spaghetti sauce
2 tablespoons brown sugar
1 cup cottage cheese
1 cup crumbled blue cheese
¼ cup freshly grated Parmesan cheese
1 large egg, lightly beaten
1 tablespoon dried oregano
1 (12 ounce) box no-boil lasagna noodles
6 slices provolone cheese
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Coat the inside of a glass 9x5-inch loaf pan with cooking spray. Line a baking sheet with aluminum foil.
  • Heat a large skillet over medium-high heat. Cook and stir beef and pork in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Mix spaghetti sauce and brown sugar into beef-pork mixture until sauce is well blended.
  • Combine cottage cheese, blue cheese, Parmesan cheese, egg, and oregano in a bowl.
  • Spread enough sauce into the bottom of the loaf pan to reach 1-inch depth. Break 2 lasagna noodles to fit the length of the loaf pan, slightly overlapping. Spread 1/2 of the cheese mixture over noodle layer. Layer 3 slices provolone, slightly overlapping, over cheese layer. Sprinkle 1/2 of the Cheddar cheese over provolone cheese. Repeat layering with the remaining ingredients ending in a layer of sauce.
  • Place the loaf pan on the prepared baking sheet and top loaf pan loosely with a piece of aluminum foil.
  • Bake in the preheated oven until bubbling and cooked through, about 1 1/2 hours. Let stand for 15 minutes before slicing.

2 zucchini, sliced lengthwise and cut into 1/4-inch-thick pieces
1 red bell pepper, seeded and cut into 1-inch squares
2 cups bite-sized broccoli pieces
1 ½ cups bite-sized baby carrot pieces
2 tablespoons extra-virgin olive oil
1 tablespoon Italian seasoning, or more to taste
salt and ground black pepper to taste
6 lasagna noodles, or more as needed
1 cup Alfredo sauce
2 tablespoons pesto, or more to taste
1 (16 ounce) container ricotta cheese
1 cup grated Parmesan cheese
⅓ (6 ounce) package fresh spinach

  • Preheat the oven to 400 degrees F (200 degrees C). Grease or line a large baking sheet with parchment paper.

1.2l milk
100g butter , cut into pieces
100g plain flour
pinch of freshly grated nutmeg
500g baby spinach leaves
250g lasagne sheets - fresh is best
3 rounded tbsp good quality pesto
500g cherry tomato on the vine, two or three vines left whole
good handful of basil leaves (or one supermarket pack)
175g piece fresh parmesan (or vegetarian alternative), coarsely grated
2 x 150g balls mozzarella , preferably buffalo, torn into bite-sized pieces

Steps:

  • Preheat the oven to 200C/gas 6/fan 180C. Put the milk, butter and flour in a medium pan and cook over a medium heat, whisking until thickened and smooth. Simmer for 1 minute. Take off the heat, season and add the nutmeg. Cool, stirring occasionally to stop a skin forming.
  • Put the spinach in a large heatproof bowl, pour over a kettle of boiling water and leave for 30 seconds. Drain into a colander, cool under the cold tap then squeeze it well to remove the excess liquid.
  • Spread a spoonful or two of the sauce on the bottom of a large ovenproof dish (about 30x20cm) and lay a third of the lasagne on top. Spoon over a third of the sauce and spread it out. Swirl a spoonful of pesto through the sauce with a knife and scatter over half the spinach with a third of the tomatoes, a few basil leaves and a third of the cheeses. Season with salt and pepper. Layer another third of the lasagne with a third of the sauce, a spoonful of pesto, the rest of the spinach, a third of the tomatoes and cheeses and some basil. Season.
  • Finish with a layer of lasagne, the last of the sauce, pesto, cheeses and the tomatoes, including those on the vine. Bake for 35-40 minutes until golden. Scatter with the last of the basil leaves and serve.

500g tub mascarpone
200g bag spinach , roughly chopped
250g frozen pea
small pack basil , leaves chopped, and a few leaves reserved to finish
small pack mint , leaves chopped
12 fresh lasagne sheets
splash of milk
85g parmesan , grated (or vegetarian alternative)
50g pine nuts
green salad , to serve (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Place the pesto, half the mascarpone and 250ml water (or vegetable stock if you have some) in a pan. Heat and mix until smooth and bubbling. Add the spinach and peas and cook for a few more mins until the spinach has wilted and the peas thawed. Add the herbs and season.
  • Place a third of the pesto mixture into a baking dish roughly 18 x 25cm. Top with 4 lasagne sheets, then repeat with 2 more layers of sauce and lasagne sheets, finishing with a layer of pasta. Mix enough milk into the remaining mascarpone to make a white sauce consistency, season, then pour over the top. Sprinkle with the Parmesan and pine nuts. Bake for 35-40 mins until golden brown on top and bubbling around the edges. Scatter over the reserved basil leaves and serve with a green salad, if you like.
