Tips:

  • Use a variety of vegetables. The more colorful your tacos, the more nutritious they will be. Some good options include bell peppers, onions, zucchini, mushrooms, and corn.
  • Roast the vegetables. Roasting brings out the natural sweetness of vegetables and gives them a slightly smoky flavor. To roast vegetables, simply toss them with olive oil, salt, and pepper, and then roast them in a preheated oven at 400 degrees Fahrenheit for 20-30 minutes, or until they are tender and slightly browned.
  • Use fresh tortillas. Fresh tortillas are softer and more flavorful than store-bought tortillas. You can find fresh tortillas at most Mexican grocery stores or online. If you can't find fresh tortillas, you can also use corn tortillas that have been warmed up in a skillet.
  • Add your favorite toppings. There are endless possibilities when it comes to toppings for vegetable tacos. Some popular options include salsa, guacamole, sour cream, cheese, and lettuce. You can also add black beans or rice to your tacos for a more filling meal.
