CHINESE VEGETABLE STIR FRY

My daughter found this on ABCNEWS.com and has made it several times now. Sometimes we are missing an ingredient the recipe calls for so we just add something different. We use a 4 ounce can of sliced mushrooms instead of the shitake. We also use frozen broccoli and snow peas to speed this recipe up.

15-MINUTE TOFU AND VEGETABLE STIR-FRY

15-Minute Tofu and Vegetable Stir-Fry image

Tofu sometimes gets a reputation for being bland, but that's not the case in this quick stir-fry. We toss meaty baked tofu in a spicy Asian marinade with tons of bold flavor. Packaged stir-fry mix and pre-sliced shiitake mushrooms can easily be found in the produce section of most grocery stores, and make it possible for this healthy meal to come together in 15 minutes or less.

Provided by Food Network Kitchen

Categories     main-dish

Time 15m

Yield 4 servings

Number Of Ingredients 11

4 cups frozen cooked brown rice
1-inch piece ginger
1/4 cup low-sodium soy sauce
1 to 2 tablespoons garlic chili sauce
1 tablespoon toasted sesame oil
12 ounces baked tofu
3 tablespoons canola oil
One 3.5-ounce package sliced shiitake mushrooms (about 2 cups)
One 1-pound package fresh stir-fry vegetable mix (not frozen)
Kosher salt
1/2 cup roasted and salted cashew halves and pieces

Steps:

  • Prepare the rice according to the package directions. Peel and finely grate the ginger and put it into a small baking dish or medium bowl along with the soy sauce, garlic chili sauce and sesame oil. Whisk to combine.
  • Place a large saute pan over medium-high heat. Cut the baked tofu into 1-inch-by-1/2-inch pieces and add to the marinade. Stir to combine and reserve. Fill a small measuring cup or bowl with cold water and keep by the stovetop.
  • Add the canola oil to the hot pan and swirl to coat. Add the shiitake mushrooms and cook until tender and browned in spots, stirring frequently, about 2 minutes. Add the stir-fry vegetable mix and a large pinch of salt. Cook until crisp tender, 3 to 5 minutes (the cooking time will depend on the size of the vegetables in the mix). If at any time the pan seems too hot, stir in 1 to 2 tablespoons water. Add the marinated tofu to the vegetables along with 2 tablespoons water. Cook until the tofu is warmed through, 1 to 2 minutes.
  • Transfer the stir-fry to a large platter. Scatter the cashews on top and serve alongside the rice.

ANY VEGETABLE STIR-FRY

Any Vegetable Stir-Fry image

It's always a shame to let precious vegetables go to waste. Once they pass their prime, they can form the foundation for a tasty stir-fry. Wrap mature greens like kale, Swiss chard and spinach in a damp towel and refrigerate them and they will keep for about seven days. Once they start to become limp, they may no longer shine raw in salads but they are perfect for stir-frying. This recipe works with what you've got, building an easy stir-fry with any combination of toasted nuts, crunchy vegetables and sturdy greens.

  • Heat olive oil and sesame oil in a large skillet over medium-low heat. Add carrots and green onions; cover and cook until tender, about 8 minutes. Stir in garlic and cook for 1 minute. Add cooked quinoa and peas, and cook until heated through, 5 to 6 minutes. Push quinoa mixture to the sides of the skillet. Add eggs and stir until cooked, 2 to 3 minutes. Stir quinoa mixture back in. Pour in soy sauce and cook until just heated, about 1 minute. Add sea salt.

Tips:

  • Mise en place is key: Chop and prep all your vegetables and ingredients before you start cooking. This will make the stir-frying process much smoother and faster.
  • Use a hot wok or large skillet: High heat is essential for a good stir-fry. Make sure your wok or skillet is nice and hot before adding the oil and ingredients.
  • Don't overcrowd the pan: Cook your vegetables in batches if necessary to avoid overcrowding the pan. Overcrowding will prevent the vegetables from cooking evenly and will make them soggy.
  • Stir-fry in small batches: Stir-frying in small batches will help prevent the vegetables from becoming overcooked and mushy. Cook each batch for 2-3 minutes, or until the vegetables are tender-crisp.
  • Use a variety of vegetables: The more variety of vegetables you use, the more flavorful your stir-fry will be. Some popular stir-fry vegetables include broccoli, carrots, bell peppers, snap peas, and bok choy.
  • Add some protein: If you like, you can add some protein to your stir-fry, such as chicken, beef, shrimp, or tofu. Just be sure to cook the protein before adding it to the stir-fry.
  • Season to taste: Season your stir-fry with soy sauce, oyster sauce, fish sauce, or other Asian調味料s. You can also add some freshly ground black pepper or red pepper flakes for a bit of heat.

Conclusion:

Vegetable stir-fries are a quick, easy, and healthy meal that can be enjoyed by people of all ages. With a little planning and preparation, you can have a delicious stir-fry on the table in no time. So next time you're looking for a healthy and flavorful meal, give vegetable stir-fry a try.
