VEGETABLE SOUP WITH EGGPLANT (AUBERGINE) DUMPLINGS
I have a 10 year old grandson who would rather eat soup for dinner then anything else.. AND it doesn't matter what kind of soup. So I get to use him as a taster and he knows the star system. He said this was a keeper for sure. You are welcome to use more garlic or spice depending on your taste, but this way is good. One good size eggplant should cover both the soup and the dumplings. Time does not include draining time for eggplant.

VEGETABLE SOUP WITH DUMPLINGS
This nutritious soup never gets boring, because the vegetables can vary depending on what's in season or on hand. In Dad's case, he was too young to help his older brothers in the fields, so he'd dig the vegetables of his choice out of the garden and help his mom prepare the soup. The dumplings are optional.

Tips:
- Mise en Place: Before you start cooking, make sure you have all the ingredients and equipment ready. This will help you stay organized and avoid scrambling while cooking.
- Use Fresh Vegetables: Fresh vegetables will give your soup the best flavor. If possible, try to use organic vegetables to avoid pesticides and chemicals.
- Choose Ripe Eggplant: When selecting eggplant for the dumplings, look for ripe ones that are firm and have a deep purple color. Avoid eggplants that are bruised or have blemishes.
- Soak the Eggplant: Soaking the eggplant in salted water before cooking helps to remove the bitterness and make it more tender.
- Drain the Eggplant Thoroughly: After soaking, make sure to drain the eggplant thoroughly to remove excess water. This will help the dumplings hold their shape while cooking.
- Season the Eggplant Mixture Well: Don't be shy with the seasonings when making the eggplant mixture. A good balance of salt, pepper, and herbs will give the dumplings great flavor.
- Cook the Soup in Batches: If you're making a large batch of soup, cook it in batches to avoid overcrowding the pot. This will help the vegetables cook evenly and prevent the soup from becoming watery.
- Simmer the Soup: Once the soup comes to a boil, reduce the heat to low and simmer for at least 30 minutes. This will allow the flavors to develop and meld together.
- Serve Hot: Vegetable soup is best served hot. Ladle it into bowls and garnish with fresh herbs or a drizzle of olive oil.
Conclusion:
This vegetable soup with eggplant dumplings is a hearty, flavorful, and satisfying meal. It's perfect for a cold winter day or a light summer lunch. The combination of fresh vegetables, savory dumplings, and rich broth makes this soup a true delight. Give this recipe a try, and you'll be sure to fall in love with it!
