VEGETABLE SALSA SOUP

Vegetable Salsa Soup image

This is a quick, tasty, low-fat vegetable soup. I usually make a big pot, and freeze half of it. Try it with zucchini, turnips, rutabagas or green beans. Sometimes I boil chicken breasts in the broth as I prepare the vegetables, then dice them and put them back in the broth with the salsa and vegetables.

SALSA VEGETABLE SOUP

Salsa Vegetable Soup image

My mom makes a beef veggie stew that is similar to this, but I wanted something healthy, low sodium, and full of veggies! It is a great soup to eat on a cold winter night. I serve it by itself, but it would also be great with a side of French bread to dip in the broth!

Tips:

  • Use fresh vegetables: Fresh vegetables will give your salsa soup the best flavor. If you can, buy them from a local farmer's market or organic grocery store.
  • Choose ripe vegetables: Ripe vegetables will be more flavorful and have a better texture than unripe vegetables.
  • Chop the vegetables evenly: This will help them cook evenly and prevent some vegetables from becoming mushy while others are still crunchy.
  • Sauté the vegetables before adding them to the soup: Sautéing the vegetables will help to develop their flavor and caramelize them slightly, which will add a delicious depth of flavor to the soup.
  • Use a good quality vegetable broth: The vegetable broth you use will make a big difference in the flavor of your soup. Look for a broth that is low in sodium and has a rich, flavorful taste.
  • Add some spices and herbs: Spices and herbs can help to brighten the flavor of your soup and make it more interesting. Some good options include cumin, chili powder, oregano, and cilantro.
  • Serve the soup with your favorite toppings: Some popular toppings for vegetable salsa soup include sour cream, avocado, and tortilla chips.

Conclusion:

Vegetable salsa soup is a delicious, healthy, and easy-to-make soup that is perfect for a quick and easy meal. It is also a great way to use up leftover vegetables. With a few simple tips, you can make a vegetable salsa soup that is sure to please everyone at your table.
