2 teaspoons minced garlic

5 cups water, or as needed
½ pound asparagus, cut into 2-inch pieces
2 tablespoons olive oil
1 cup finely chopped onion
2 cloves garlic, finely chopped
2 cups short-grain brown rice
2 carrots, peeled and diced
2 zucchini, diced
½ cup green peas, thawed if frozen
⅔ cup grated Parmesan cheese
1 tablespoon butter
salt and ground black pepper to taste

Steps:

  • Bring vegetable broth and water to a boil in a saucepan over high heat. Add asparagus, reduce heat to low, and simmer until just tender, 2 to 3 minutes. Use a slotted spoon to transfer asparagus to a bowl of ice water; let chill for 5 minutes. Drain and set aside. Meanwhile, cover saucepan and keep broth mixture at a near-simmer on low heat.
  • Heat olive oil in large skillet over medium heat. Stir in onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add rice and cook, stirring gently, until toasted and fragrant, 4 to 5 minutes.

1/2 cup finely chopped onion
1/2 cup each finely diced celery and carrot
1 1/2 cups short grain or Arborio rice
Minced garlic
5 cups simmering water
1 cup thawed frozen petite peas
Salt and freshly ground black pepper
1/2 cup grated fresh Parmesan cheese
1/4 cup chopped fresh basil leaves
1/4 cup toasted pine nuts, optional

Steps:

  • Heat the butter and oil in a heavy wide saucepan. When foaming subsides add the onion and cook for 5 minutes or until golden brown. Add half of the celery and carrot and cook for 3 to 4 minutes or until tender but still crisp. Add the rice and cook, stirring continuously, for 5 minutes or until toasty. Add the garlic and simmer a few seconds. Add 1/2 cup boiling water and cook until rice has fully absorbed it. Continue this way until 1 1/2 cups water have been absorbed, then add 1 cup of boiling water.

2 small carrots, diced
2 tablespoons unsalted butter
1 cup Arborio rice
Pinch saffron
1/4 cup dry white wine
3 1/2 cups chicken stock, hot
1 cup peeled fresh fava beans, or peas
8 small asparagus spears, cut in 1-inch pieces on the diagonal
Coarse salt and freshly ground pepper to taste
1/2 cup freshly grated Parmesan cheese

Steps:

  • In a large frying pan, soften the onion with the carrots in one tablespoon butter. Add the rice and cook, stirring, for a couple of minutes until the rice is well coated with butter and starts to turn opaque. Add the saffron and wine and stir thoroughly.
  • Add a cup of hot chicken stock and cook, stirring, until most of the liquid is absorbed.
  • Add one-half cup more stock and continue cooking, stirring frequently.
  • Add the fava beans and asparagus and another cup of stock. Continue cooking and adding stock until the rice is al dente. It is done when it is firm but tender and creamy. The vegetables should be barely tender. Season to taste with salt and pepper.

1 teaspoon/5ml cornstarch, diluted in water
1 cup/250ml butter, melted
Salt and freshly ground black pepper
4 cups/1liter vegetable stock, store-bought or homemade, recipe follows
3 tablespoons/45ml olive oil
2 cups/500ml peeled and diced celeriac
2 cups/500ml peeled and diced parsley roots
2 cups/500ml peeled and diced parsnips
2 cups/500ml peeled and diced salsify
2 shallots, finely chopped
1/4 cup/60ml butter
1 cup/250ml grated Parmigiano-Reggiano
1/4 cup chopped fresh chives
1/4 cup chopped fresh parsley
Salt and freshly ground black pepper
3 tablespoons/45ml olive oil
12 to 16 King Eryngii mushrooms (also called French horn mushrooms)
1 teaspoon/5ml steak spice
Micro herbs, for garnish

4 celery ribs with leaves, separated and roughly chopped

Steps:

  • For the carrot butter: Juice the carrots using a juicer (you should have 4 cups/1liter). If you don't have a juicer you can use store-bought carrot juice.
  • Bring the carrot juice to a simmer in a small saucepan. Cook over low heat until reduced to 1 cup (250 ml), about 45 minutes. Add the diluted cornstarch. Slowly add the melted butter, using a hand mixer or whisk to incorporate it. Season with salt and pepper.
  • For the risotto: Heat the vegetable stock in a saucepan.
  • In a large skillet, heat the oil and saute the celeriac, parsley roots, parsnips, salsify and shallots. Add vegetable stock, one ladle at a time, stirring constantly with a wooden spoon and cooking until almost all the liquid has been absorbed before adding more. Continue cooking and adding stock until the vegetables are cooked but still al dente, about 25 minutes. Stir in the butter, Parmigiano-Reggiano, chives and parsley. Season with salt and pepper. Keep warm.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • For the mushrooms: Heat the oil in a skillet over medium-high heat. Saute the mushrooms until golden brown. Season with steak spice. Transfer the skillet to the oven and roast the mushrooms for 5 minutes.
  • To serve, divide the vegetable risotto among dishes and top with the mushrooms. Drizzle with carrot butter and garnish with micro herbs.
  • Heat the oil in a large stockpot over medium heat. Lower the heat and add the carrots, celery, garlic, onions, parsley roots and leeks. Cook until the vegetables are slightly colored, about 5 minutes. Stir in the ketchup, peppercorns, celery leaves and parsley leaves. Add enough water to cover. Bring to a boil, then lower the heat and simmer for 30 to 45 minutes (it's important not to cook it for too long). Strain, cool and refrigerate until ready to use.

3 sprigs fresh herbs (Basil, oregano or thyme)
4 tablespoons olive oil
1 medium yellow onion, finely chopped
1 (19 ounce) package Johnsonville® Mild Italian Sausages (casings removed)
2 cups white button mushrooms, wiped clean and sliced about 1/4 inch thick
2 cups arborio rice or 2 cups medium grain risotto rice
1/2 cup dry white wine
1/2 lb asparagus, stemmed and cut into 1 inch pieces
1/2 cup peas (fresh shelled or frozen)
salt & freshly ground black pepper
1/3 cup shredded parmesan cheese
parmesan cheese, for garnish (Shaved or shredded)

Steps:

  • Pour the stock into a sauce pan, if using fresh herbs, add them to the stock and bring to a gentle simmer. Cover until ready to use.
  • In a large sauce pan, heat oil over medium heat, add onion and sauté until tender and translucent, about 5 minutes. Add the sausages, using a wooden spoon, break up the sausage as it cooks into bite size pieces until browned, about 5 minutes. Add the mushrooms and cook, stirring until just wilted, about 2 minutes. Mix in the rice and cook, stirring until the kernels are hot and coated with oil; about another 2 minutes. Add the wine and stir continuously until the liquid is absorbed.
  • Using a ladle, add the hot stock about ½ cup at a time, stirring constantly and making sure the stock has been absorbed before adding more to the rice. Continue adding ½ cup of stock and stirring rice constantly and gently. When the rice is about half cooked or only 1½ cups of the stock remains add the asparagus pieces into the rice and continue stirring. When you have about 1 cup of liquid left, stir the peas into the rice and season with salt and pepper to taste. Continue stirring. The risotto is done when the rice grains are creamy on the outside and firm yet tender to the bite, (about 20-25 minutes total).
  • When the risotto is just right, remove it from the heat and stir in the shredded parmesan cheese. Spoon into large soup bowls, top with shaved parmesan and serve immediately.
  • *Rice varies, so you may not need all the stock or you may need more. If more liquid is required you can add simmering water in place of extra broth. You should taste for doneness along the way.

1/2 cup fresh swiss chard, chopped fine.
1 cup grated Parmiggiano Reggiano cheese.

Steps:

  • Wash and chop all vegetables by hand. (Do not chop in food processor, or the vegetables will be too fine and you won't be able to taste them. Bring chicken broth to a simmer. Saute the onion in the butter until golden and transparent, add the Arborio rice. Saute' the rice for about 3 munites, add the wine, stir, cook on medium heat until the wine is evaporated. Add the chicken broth, stir and simmer until evaporated, continue this method, adding and stirring, until the rice is not quite cooked through. Add the vegetables, and continue cooking for another 10 minutes. Vegetables should be tender crisp. Serve with freshly grated Parmiggiano Reggiano cheese on each portion.

250g/10oz broad beans
50g/2oz butter
3 tbsp olive oil
1 tbsp chopped fresh mint leaves
1 onion, finely chopped
2 garlic cloves, crushed
3-4 sprigs fresh thyme
1 long strip lemon zest
1 bay leaf
150g/5oz Arborio risotto rice
150ml/5oz dry white wine
750ml/1 pint 7fl oz hot vegetable stock
100g/3½oz peas
1 bunch asparagus, trimmed and cut into short lengths
100g/3½oz fresh runner beans, de-stringed and cut into long thin strips
100g/3½oz feta cheese, drained and crumbled into small pieces
sea salt flakes and freshly ground black pepper
parmesan shavings, to serve

Steps:

  • 1. Fill a saucepan with water and bring to the boil. Add the broad beans and return to the boil. Cook for one minute then drain in a colander under running water until cold. Remove the beans from their skins and set aside. Mix the mint with two tablespoons of the olive oil and set aside. 2. Melt 25g/1oz of the butter with the remaining oil in a large non-stick saucepan and fry the onion and garlic for five minutes until softened, but not coloured. Stir in the thyme, lemon zest, bay leaf and risotto rice and cook for a few seconds more until the rice is glistening. 3. Pour the wine in to the pan and boil over a medium heat until the liquid has reduced by half. Slowly start adding the stock, a ladleful at a time, stirring well between each addition. Simmer for 2-3 minutes or until the liquid has almost all been absorbed before adding more. Cook for 15 minutes or until the rice is tender. 4. Meanwhile, fill a medium saucepan with water and bring to the boil. Cook the runner beans for three minutes, or until tender. Drain in a colander then return to the pan and toss with a small knob of the remaining butter and plenty of ground black pepper. 5. Remove the thyme and lemon zest from the rice and discard. Stir in the broad beans, peas and asparagus with the remaining stock and cook for three minutes until tender, stirring regularly. Remove from the heat and stir in the feta. Season with salt and freshly ground black pepper. Cover with a lid and set aside. 6. Add the remaining butter to the risotto and stir. Spoon into four deep plates and tap gently on the work surface to spread the risotto slightly. Spoon over the minted olive oil. Top with the runner beans and shavings of fresh parmesan and serve immediately.

Steps:

  • In 10-inch nonstick skillet, heat butter and oil over medium-high heat until butter is melted. Add onion and garlic; cook 3 to 4 minutes, stirring frequently, until onion is tender.
  • Stir in rice. Cook, stirring occasionally, until edges of kernels are translucent. Stir in 1/2 cup of the broth. Cook 2 to 3 minutes, stirring constantly, until broth is absorbed.
  • Reduce heat to medium. Stir in 1 1/2 cups of the broth; cook uncovered about 5 minutes, stirring frequently, until broth is absorbed. Stir in another 1 cup of the broth; cook uncovered about 5 minutes longer, stirring frequently, until broth is absorbed.
  • Stir in remaining 1 cup broth. Cook about 8 minutes, stirring frequently, until rice is tender and mixture is creamy.
  • Meanwhile, cook frozen vegetables as directed on bag. Stir vegetables, Parmesan cheese, parsley and pepper into rice mixture.

2 cups shelled fresh (or frozen, thawed) fava beans or peas (from about 2 pounds pods)
Kosher salt
1 tablespoon distilled white vinegar
6 large eggs
8 cups low-sodium chicken broth
2 tablespoons unsalted butter, divided
1/4 pound chanterelles or crimini (baby bella) mushrooms, halved or quartered if large
2 tablespoons olive oil
2 large leeks, whites and pale greens only, chopped
1 fennel bulb, chopped
4 garlic cloves, finely chopped
2 cups arborio rice
1 cup dry white wine
1 bunch flat-leaf spinach, trimmed, leaves torn
2 tablespoons crème fraîche or sour cream
1 1/2 cups finely grated Pecorino or Parmesan (about 3 ounces) plus more for shaving
1/4 cup chopped fresh chives plus more for serving
Freshly ground black pepper

Steps:

  • If using fresh fava beans, cook in a large saucepan of boiling salted water 1 minute. Drain; transfer to a bowl of ice water and let cool. Peel favas and transfer to a small bowl.
  • Bring a large skillet of salted water to a bare simmer over medium-low heat. Add vinegar. Crack 1 egg into a small bowl, then slide into simmering water. Repeat with 2 more eggs. Cook until whites are cooked but yolks are runny, about 3 minutes. Using a slotted spoon, carefully transfer eggs to a bowl of ice water. Repeat with remaining 3 eggs.
  • Bring broth to a simmer in a large saucepan over medium heat. Reduce heat to low; cover and keep warm.
  • Meanwhile, melt 1 tablespoon butter in a large, wide heavy pot over medium heat. Add mushrooms and cook, stirring often, until tender, about 5 minutes. Using a slotted spoon, transfer to bowl with favas.
  • Heat oil and remaining 1 tablespoon butter in same pot over medium heat. Add leeks, fennel, and garlic. Cook, stirring often, until vegetables are softened, about 4 minutes.
  • Add rice and stir to coat, about 2 minutes. Add wine and cook, stirring occasionally, until evaporated, about 4 minutes. Add 1 cup broth. Cook, stirring often (no need to stir constantly), until broth is almost absorbed. Add remaining broth by cupfuls, allowing broth to be absorbed before adding more, stirring often, until rice is tender but still firm to the bite and mixture is creamy, about 20 minutes total.
  • Add spinach, crème fraîche, 1 1/2 cups grated Pecorino, 1/4 cup chives, and reserved fava beans and mushrooms to risotto. Cook, stirring occasionally, until spinach is wilted and cheese is melted, about 2 minutes. Season risotto with salt.
  • A few minutes before risotto is done, reheat poached eggs in a large skillet of simmering water, about 1 minute. Divide risotto among bowls and top with eggs, shaved Pecorino, chives, and pepper.

2 tablespoons minced fresh parsley leaves , stems reserved

Risotto
1 pound asparagus , tough ends snapped off and reserved, spears cut on bias into 1/2-inch thick pieces
2 medium leeks , white and light green parts halved lengthwise, washed, and sliced thin (about 4 cups), 2 cups roughly chopped greens reserved (see note)
4 cups low-sodium chicken broth (see note)
3 cups water
5 tablespoons unsalted butter
Salt and ground black pepper
1/2 cup frozen peas
2 medium garlic cloves , minced or pressed through garlic press (about 2 teaspoons)
1 1/2 cups Arborio rice (see note)
1 cup dry white wine
1 1/2 ounces grated Parmesan cheese (about 3/4 cup), plus extra for serving
2 teaspoons juice from 1 lemon

Steps:

  • 1. For the Gremolata: Combine ingredients in small bowl and set aside. 2. For the Risotto: Chop tough asparagus ends and leek greens into rough 1/2-inch pieces. Bring chopped vegetables, reserved parsley and mint stems, broth, and water to boil in large saucepan over high heat. Reduce heat to medium-low, partially cover, and simmer 20 minutes. Strain broth through fine-mesh strainer into medium bowl, pressing on solids to extract as much liquid as possible. Return strained broth to saucepan; cover and set over low heat to keep broth warm. 3. . Heat 1 tablespoon butter in large Dutch oven over medium heat. When foaming subsides, add asparagus spears, pinch of salt, and pepper to taste. Cook, stirring occasionally, until asparagus is crisp-tender, 4 to 6 minutes. Add peas and continue to cook 1 minute. Transfer vegetables to plate and set aside. 4. Melt 3 tablespoons butter in now-empty Dutch oven over medium heat. When foaming subsides, add leeks, garlic, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Cook, stirring occasionally, until leeks are softened, 4 to 5 minutes. Add rice and cook, stirring frequently, until grains are translucent around edges, about 3 minutes. Add wine and cook, stirring frequently, until fully absorbed, 2 to 3 minutes. 5. When wine is fully absorbed, add 3 cups hot broth to rice. Simmer, stirring every 3 to 4 minutes, until liquid is absorbed and bottom of pan is almost dry, about 12 minutes. 6. Stir in about 1/2 cup hot broth and cook, stirring constantly, until absorbed, about 3 minutes; repeat with additional broth 3 or 4 times until rice is al dente. Off heat, stir in remaining tablespoon butter, Parmesan, and lemon juice; gently fold in asparagus and peas. If desired, add up to 1/4 cup additional hot broth to loosen texture of risotto. Serve immediately, sprinkling each serving with gremolata and passing Parmesan separately.

Tips:
