Using the turkey bones to make a broth for the soup is the best way to get every penny's worth from your bird. If your leftover stuffing is chunky and rustic, finely chop it to make these delicate dumplings.

Carcass from one 12 to 14 pound roasted turkey, picked clean
2 large onions, one quartered and one chopped
4 peeled carrots, 2 coarsely chopped and 2 sliced
4 stalks celery, 2 coarsely chopped and 2 sliced
6 garlic cloves, 4 smashed and 2 chopped
1 bay leaf
10 whole black peppercorns
1 tablespoon extra-virgin olive oil
2 large eggs
6 tablespoons all-purpose flour, plus more as needed
1/2 teaspoon salt, plus more as needed
Freshly ground black pepper, to taste
2 cups leftover stuffing
2 sprigs fresh thyme
2 cups shredded leftover turkey meat
1 cup leftover corn kernels

Steps:

  • Put the turkey carcass, quartered onions, coarsely chopped carrots and celery, smashed garlic, bay leaf, and peppercorns in a large stockpot and add enough cold water to just cover, about 2 quarts. Bring the water to a boil, and then reduce the heat to maintain a gentle simmer and cook for 1 hour. Remove from the heat and strain the solids from the broth. Pour the liquid through a fine mesh strainer and reserve; you should have about 10 to 12 cups broth.
  • Meanwhile, in a small bowl, whisk the eggs, flour, 1/2 teaspoon salt, and some black pepper together until smooth. Add the stuffing and mix until well combined; cover and reserve.
  • Wipe the stockpot clean with a paper towel. Heat the oil in the pot over medium heat. Add the chopped onion and garlic and cook until soft and translucent, about 6 minutes. Add the sliced carrots and celery, thyme sprigs, and reserved broth and bring to a simmer; cook vegetables are just soft, about 10 minutes.
  • Roll level tablespoons of the dumpling mixture into balls with wet hands (see note) and drop into the simmering soup; cook until dumplings float, 3-4 minutes. Gently stir in the turkey meat, corn, and season with salt and pepper, and simmer until heated through. Serve immediately.

3 quarts water
2 small onions, divided
1 bay leaf
4 medium potatoes, peeled and cubed

2 cups cut green beans
3/4 cup medium pearl barley

Steps:

  • In a stockpot, place the beef bones, water, one onion and bay leaf. Bring to a boil. Skim off foam. Reduce heat to simmer. Cover and cook for 3 hours or until meat falls off the bones. , Discard bones, onion and bay leaf. Remove meat from the bones and dice. Skim fat from broth. Add the meat, remaining onion quartered, remaining vegetables, barley and parsley to the pot. Season to taste. Cover and cook for 1 hour or until barley and vegetables are tender. , For dumplings, combine the flour, baking powder and salt. Add milk and stir just until moistened. This recipe is adapted from the children's cookbook "Around the World: Delicious Dishes from Across the Globe," from the American Girl cookbook series, and was inspired by the dumplings you might get at your local Chinese takeout spot. They're not necessarily authentic, but they are delicious, and folding and frying them is a fun weekend project for kids of all ages. You can use round or square wonton wrappers for this project, but don't forget the sauce: It's what makes these dumplings great.

1 tablespoon rice vinegar

2 scallions, thinly sliced
2 teaspoons low-sodium soy sauce
2 teaspoons hoisin sauce
1 teaspoon peeled and grated fresh ginger
6 teaspoons canola oil, plus more as needed
1 cup finely shredded green cabbage
1/2 cup finely chopped cremini mushrooms
1/3 cup peeled and shredded carrot

Steps:

  • Make the dipping sauce: In a small bowl, whisk the soy sauce, vinegar, brown sugar, ginger and sesame oil (if using) until the sugar dissolves. Cover and set aside.
  • Make the filling for the dumplings: In another small bowl, stir together the scallions, soy sauce, hoisin sauce and ginger. Add 2 teaspoons canola oil to a large nonstick frying pan. Turn the heat to medium and warm up the oil for 2 minutes. Carefully add the cabbage, mushrooms and carrot and sprinkle with a pinch of salt. Cook, stirring often, until the vegetables are slightly softened, about 3 minutes. Add the scallion mixture and stir to combine. Transfer the dumpling filling to a medium bowl and let cool to room temperature. Wipe out the pan or clean it if necessary.
  • Once the filling has cooled, assemble the dumplings: Put 1 cup water in a medium bowl. Sprinkle a large rimmed baking sheet with 2 to 3 tablespoons cornstarch, using your fingers to evenly distribute it.
  • Lay 1 wonton wrapper on a clean work surface. Spoon 1 teaspoon of the dumpling filling in the center of the wrapper. Dip your fingers in the water and lightly moisten the edges of the wrapper. Fold the wrapper in half (if using squares, fold the wrapper in half diagonally to form a triangle) and press the edges together to seal. Place the dumpling on the prepared baking sheet. Repeat with additional wrappers and the remaining filling until you've used up all the filling. (At this point, you can freeze some of the dumplings in a single layer on the baking sheet. Once they are frozen, transfer them to a resealable plastic bag and freeze for up to 3 months. Don't thaw them before cooking, but add a few minutes to the cooking time.)
  • Cook the dumplings: Brush the same frying pan with 2 teaspoons canola oil, set the pan over medium heat and warm up the oil for 2 minutes. Adding one dumpling at a time but working quickly, dust off excess cornstarch and add as many dumplings as will comfortably fit in a single layer in the pan (don't crowd them or they won't cook evenly). Let cook (no stirring!) until browned on the bottom, 2 to 3 minutes. Using tongs, gently flip the dumplings. Carefully pour about 1/2 cup water into the pan (it will bubble up and steam!). Cover and cook until the water is mostly absorbed, about 4 minutes.
  • Transfer the dumplings to a serving platter and cover lightly with aluminum foil to keep warm. Repeat to cook the remaining dumplings, brushing the pan with 2 teaspoons canola oil before each batch.
  • Serve dumplings warm, with the dipping sauce.

1 1/2 cups cubed, peeled sweet potatoes
4 cups chicken stock
1 teaspoon dried thyme

1 cup frozen peas
1 cup all-purpose flour
2 tablespoons chopped fresh parsley

Steps:

  • In a large pot, combine chicken, all veg except peas, stock and spices; bring to a boil over high heat.
  • Reduce heat to medium-low and simmer, covered, for 20 minutes; stir in peas.

1 garlic clove, minced
1 1/2 teaspoons sugar
1 1/2 teaspoons sesame oil (dark)
1/8 teaspoon pepper
2 teaspoons canola oil
1 teaspoon sesame oil (dark)
2 tablespoons ginger, peeled and minced
3 garlic cloves, minced
1/2 lb shiitake mushroom, thinly sliced
3 cups Chinese cabbage, shredded
2 tablespoons sake
3 scallions, chopped
1 carrot, chopped
1 tablespoon light soy sauce
45 wonton wrappers (3-inch round)

Steps:

  • Combine ingredients for dipping sauce and set aside.
  • Prepare the dumplings by heating a large, non-stick wok over medium-high heat. Swirl in the canola and sesame oils and add ginger and garlic. Stir fry for about 10 seconds and stir in mushrooms and cabbage for 3 minutes.
  • Add the sake and cook, stirring, for 3 - 4 minutes until liquid evaporates. Next add the scallions and the carrot and stir-fry about 2 minutes. Remove from heat and add soy sauce. Allow mixture to cool.
  • Place 1 teaspoon of the vegetable mixture in center of a wrapper. Moisten edges of wrapper with water and fold unto half circles. Place on baking sheet sprinkled with cornstarch. Keep wontons covered with a damp towel to prevent them from drying out.
  • Spray skillet with nonstick spray heat over medium-high heat. Add 10 dumplings to the skillet and cook until browned on one side. Add 1/3 cup water to the skillet and cover with lid. Reduce heat to medium and cook until liquid evaporates (3 -4 minutes).
  • Serve dumplings with dipping sauce.

This is a very different vegetable stew just packed with flavor - and is one of my family's most requested and one of my very favorites. It is based on a recipe from one of my favorite cookbooks, "Tis the Season - A Very Vegetarian Christmas", by Nanette Blanchard. Although this comes from a Christmas cookbook, I like to serve this all year long, although it is especially comforting in the fall and winter months when it's cold. The original recipe calls for a puff pastry crust, which could make quite an elegant meal fit for company. However, I like to serve it with dumplings, so it's more everyday for my family. I'm sure it would be equally delicious without the dumplings - although my family would be upset if I didn't include them (the dumplings are usually fought over in my house). I've included just a basic dumpling recipe, but if you have one of your own, by all means please use it! You could also use some refrigerated biscuit dough if you have it on hand. This is something we might eat on a Sunday evening at our house, although the stew actually comes together quite quickly. I hope you enjoy it as much as my family does.

3 tablespoons olive oil
3 tablespoons flour

3 tablespoons skim milk
rosemary (optional) or fresh herb, of choice (optional)

Steps:

  • In a large dutch oven, saute the onion in olive oil over med. heat for approximately 5 mins or until tender.
  • Add garlic and saute just until fragrant (approx. 1 min) - be careful not to burn.
  • Add flour and stir unil mixed.
  • Add apple cider or sherry vinegar, light brown sugar, and dijon mustard.
  • Stir until combined.
  • Slowly stir in broth.
  • Add cinnamon, chopped carrots, and chopped potatoes.
  • Bring to a boil, reduce the heat, and simmer until thickened and vegetables are tender (approx. 45 mins).
  • Add frozen peas and frozen corn and cook an additional 10 mins or until cooked through.
  • Taste and season with salt and pepper if desired. (Can be served at this point if not using the dumplings).
  • If making the Dumplings -
  • Combine Bisquick and skim milk (and fresh herbs if desired) in mixing bowl and stir until combined and soft dough forms.
  • Drop by rounded teaspoons into hot stew.
  • Cover and cook until done (approx. 10 mins).
  • You may need to turn your dumplings in order to cook evenly about 1/2 way through - especially if they are large.

3 cups chicken broth
3/4 cup heavy cream
2 large egg yolks
4 cups bite-size pieces cooked turkey
3/4 teaspoon finely chopped fresh rosemary or 1/2 tablespoon crumbled dried
For the dumpling batter
1 cup all-purpose flour
1 1/2 teaspoons double-acting baking powder
1/2 teaspoon salt
1/2 teaspoon crumbled dried rosemary
1 tablespoon minced fresh parsley leaves
1/2 cup milk

Steps:

  • Make the turkey mixture
  • In a kettle melt the butter over moderately low heat and in it cook the onion, the carrots, and the celery, stirring occasionally, until the vegetables are softened.
  • Add the wine and cook the mixture for 3 minutes. Add the flour and cook the roux, stirring, for 3 minutes. Add the broth in a stream and bring the sauce to a boil, whisking. In a bowl whisk together the cream and the yolks, whisk about 1/2 cup of the sauce into the bowl to temper the cream mixture, and add the cream mixture, in a stream, to the sauce. Cook the mixture over moderately low heat, whisking, until it is thickened (do not let it boil) and stir in the turkey, the rosemary, and salt and pepper to taste.
  • Make the dumpling batter
  • In a bowl whisk together the flour, the baking powder, the salt, the rosemary, the parsley, and pepper to taste, add the milk, and stir in the batter until it is just combined.
  • Drop the batter by spoonfuls into 6 or 8 mounds (do not let the liquid boil), simmer the dumplings, uncovered, for 10 minutes, and simmer them, covered, for 10 minutes more.

4 cups vegetable broth
2 medium carrots, peeled, halved lengthwise, and cut into 1/2-inch lengths
2 large parsnips, peeled, thick end halved lengthwise, cut across into 1/8-inch thick slices
1 small celery root, trimmed, peeled and cut into 1/4-inch cubes
1 medium sweet potato, peeled and cut into 1/2-inch cubes
3 tablespoons all-purpose flour
2 teaspoons salt
Freshly ground pepper to taste
1 tablespoon chopped fresh Italian parsley
1 cup all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt

2 tablespoons cold unsalted butter

  • To make the stew, melt the butter in a large pot over medium heat. Add the onion and cook for 3 minutes. Stir in the garlic and curry powder and cook for 30 seconds. Stir in the broth, carrots and parsnips. Bring to a boil. Reduce to a simmer. Cover and cook for 15 minutes. Stir in the celery root and sweet potato and cook for 10 minutes.

1 1/4 cups dry lentils
8 cups water
4 carrots, peeled and sliced
3 -4 celery ribs, peeled and sliced
1 large onion, peeled and sliced
4 bouillon cubes or 1 teaspoon salt
1 teaspoon garlic powder
1/4 teaspoon black pepper
2 tablespoons vegetable oil
1 eggs or 3 tablespoons milk
1/2 cup milk
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon sugar

Steps:

  • Begin by making the soup. Rinse the lentils under running water. Then place them in a large pot and cover them with the 8 cups water. Bring to a boil and allow to simmer over medium heat for about 20 minutes. The lentils will be almost tender. Add the vegetables, bouillon or salt, garlic and black pepper Stir gently and allow the mixture to simmer for 20 minutes more. The vegetables and lentils wll both be tender. Taste and add salt if necessary.
  • Now look over the amount of liquid in the pot. Add enough extra water so that all of the solids are well covered with liquid. They don't need to be swimming over their heads, but they should be wading up to their waists. Bring the mixture to a slow lazy simmer, not a boil. If the soup boils, it will cause the dumplings to disintegrate instead of cooking up into fluffy, glimmering jewels.
  • While the soup is simmering, prepare your dumplings. Get out a big bowl. In it combine the oil, egg and milk until they are well blended. Add the flour, baking powder, salt and sugar. Mix it up to a stiff batter, like for drop biscuits. Set it aside until you need it.
  • When the soup is simmering slowly, it is time to drop in the dumplings. Take small rounded scoops of the dough with a teaspoon and drop them into the simmering broth, on top of the vegetables. Keep dropping the dough blobs until you have scraped the bowl clean. Now cover the pot and let it simmer for 20 minutes. Do not peek. Let the dumplings simmer covered for the full 20 minutes. The thing about dumplings is that they cook partly from the soup and partly from the steam. The steam is what makes them fluffy, and the broth is what cooks them through. If you peek while the dumplings are cooking, they will turn into lumpy, doughy rocks. When the time is up, serve the soup and dumplings as soon as possible. The soup will be thickened and the dumplings will be light and fluffy.

He said this was a keeper for sure. You are welcome to use more garlic or spice depending on your taste, but this way is good. One good size eggplant should cover both the soup and the dumplings. Time does not include draining time for eggplant.

1 1/2 cups eggplants (cut into 1 inch cubes)
1 tablespoon salt
2 tablespoons olive oil
1 medium onion (cut in half, then quarter)
4 garlic cloves (chopped)

1/2 cup eggplant (chopped about pea size)

Steps:

  • SOUP:.
  • Peel eggplant, cut all eggplant into 1 inch cubes, sprinkle with salt.
  • Put in a strainer to drain for an hour, then dry with paper towel. Put aside 1/2 cup for dumplings.
  • Heat large pot and add olive oil.
  • Add eggplant (all except the 1/2 cup), onion, garlic and saute for 3 minutes.
  • Add wine and reduce for 30 seconds.
  • Add water.
  • Stir in all garbanzo beans.
  • Stir in remaining soup ingredients.
  • Bring to boil and reduce heat to simmer, until all vegetables are tender.
  • DUMPLINGS:.
  • Heat small pan on stove. Add olive oil.
  • Saute eggplant for 3 minutes. Set aside to cool.
  • Mix flour, salt, baking powder, and milk in a bowl.
  • Blend in eggplant and oregano.
  • Using a tablespoon, drop spoonfuls onto simmering soup, about 12 dumplings.
  • Keep in mind that the dumplings will expand as they cook.
  • Cook 15 minutes uncovered, 15 minutes covered.
  • Serve in bowls, sprinkle with feta cheese.

1 large onion, sliced
2 large carrots, sliced
3-4 celery sticks, sliced
500 g potatoes, medium, cut up
14 oz can plum tomatoes
750 ml vegetable stock
1 Tbsp tomato puree
1 tsp paprika
2 Tbsp chopped parsley
salt, pepper
DUMPLINGS
50 g butter
125 g flour
1 tsp baking powder, heaped
2 Tbsp chopped parsley
1 egg, beaten

Steps:

  • 1. Heat the oil in a large pot and fry the onion until soft. Add the carrots, celery and potato. Let sweat over a gentle heat for about 5 minutes. Add the rest of the ingredients, bring to the boil and then simmer for about 20 minutes.
  • 2. Meanwhile, prepare the dumplings. Rub the butter into the flour until it resembles breadcrumbs. Add the herb, salt and pepper and mix with the egg, adding enough water to form a sticky dough.
  • 3. Using a wet spoon drop tablespoons of the dough on top of the simmering stew. Place the cover on the pot and leave for about 10 minutes.Remove a dumpling, if when you cut into it its fluffy and "bready", it's done!! Remove them all at the one time, just like bread, they'll get soggy if you leave them too long.

2 large eggs, lightly beaten

2 lemons, halved
4 medium artichokes (10 ounces each)
3 tablespoons unsalted butter
10 ounces red pearl onions, blanched and peeled
1 rind Parmesan cheese (about 5 inches long; or subsitute 5-inch piece cheese)
2 1/2 cups homemade or low-sodium store-bought vegetable stock (not roasted)
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
12 orange or yellow baby carrots, peeled, or 3 medium carrots, peeled, halved lengthwise, and cut into 3-inch pieces
2 tablespoons finely chopped fresh tarragon
6 ounces asparagus, trimmed and cut into 3-inch pieces (about 1 1/4 cups)

Cut off top third; peel stem. Halve artichoke lengthwise; remove fuzzy choke, and discard. Cut into 1-inch-thick wedges, and place in lemon water. Repeat with remaining artichokes.
  • Melt butter in a medium stockpot over medium heat. Add onions; cook, stirring occasionally, 3 minutes. Add Parmesan rind. Drain artichokes; add to pot. Stir in stock and 4 1/2 cups water; add salt and pepper. Bring to a boil. Add carrots. Reduce heat; simmer, partially covered, 10 minutes. Squeeze remaining 1/2 lemon into pot; stir in tarragon.
  • Using 2 spoons, form 18 dumplings, dropping into stew as you work. Cover; cook 7 minutes. Add asparagus. Cook, covered, until the dumplings are cooked through and vegetables are tender, about 3 minutes. Remove rind before serving.

1/2 cup coarsely grated carrots
1/2 cup shredded Napa cabbage
2 tablespoons finely chopped red pepper
2 tablespoons finely chopped scallions
2 teaspoons finely minced fresh ginger
1 tablespoon chopped cilantro leaves
1 tablespoon soy sauce
1 tablespoon hoisin sauce
2 teaspoons sesame oil
1 egg, lightly beaten

35 to 40 small wonton wrappers
Non-stick vegetable spray, for the steamer

Steps:

  • Preheat the oven to 200 degrees F. Cut the tofu in half horizontally and lay between layers of paper towels. Place on a plate, top with another plate, and place a weight on top (a 14-ounce can of vegetables works well). Let stand 20 minutes.
