Yield Serves 8

Number Of Ingredients 13

1 1/2 cups finely chopped onion
1 cup finely chopped scallion
3/4 pound mushrooms, sliced thin
3 tablespoons olive oil
2 red bell peppers, cut into thin strips (about 2 cups)
2 green bell peppers, cut into thin strips (about 2 cups)
enough Italian bread cut into 1-inch cubes to measure 9 cups (about 1 1/2 loaves)
2 1/2 cups coarsely grated extra-sharp Cheddar (about 10 ounces)
1 cup freshly grated Parmesan
12 large eggs
3 1/2 cups milk
3 tablespoons Dijon-style mustard
Tabasco to taste

Steps:

  • In a large skillet cook the onion, the scallion, and the mushrooms in the oil over moderately low heat, stirring, until the onion is softened, add the bell peppers and salt and pepper to taste, and cook the mixture over moderate heat, stirring, for 10 to 15 minutes, or until all the liquid the mushrooms give off is evaporated and the peppers are tender. Arrange half the bread cubes in a buttered large shallow (4 1/2-quart) baking dish, spread half the vegetable mixture over them, and sprinkle half the Cheddar and half the Parmesan over the vegetables. Arrange the remaining bread cubes over the cheeses, top them with the remaining vegetables, and sprinkle the remaining cheeses over the top. In a bowl whisk together the eggs, the milk, the mustard, the Tabasco, and salt and pepper to taste, pour the egg mixture evenly over the strata, and chill the strata, covered, overnight. Let the strata stand at room temperature for 15 minutes and bake it in the middle of a preheated 350°F. oven for 50 minutes to 1 hour, or until it is puffed and golden and cooked through.

Yield 6 serving(s)

Number Of Ingredients 15

3/4 cup diced onion
1/2 cup diced green onion
1 (8 ounce) package fresh mushrooms, sliced
2 tablespoons olive oil
1 red bell pepper, cut into thin strips
1 green bell pepper, cut into thin strips
5 cups Italian bread, cubes 1 inch
1 1/2 cups shredded cheddar cheese
1/2 cup shredded parmesan cheese
6 large eggs
1 3/4 cups milk
1 tablespoon Dijon mustard
1/2-1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon hot sauce

Steps:

  • Let oil get hot in a large skillet.
  • Add in onions and mushrooms; saute until tender.
  • Add in bell pepper; cook and stir frequently for 10 minutes or until liquid evaporates.
  • Put 2 1/2 cups bread cubes evenly in a lightly greased 11x7 inch baking dish.
  • Top with half of the mushroom mixture.
  • Sprinkle with half the cheddar cheese and half the parmesan cheese; repeat layers.
  • In a mixing bowl, whisk the eggs, milk, mustard, salt, pepper, and hot sauce until well blended; pour over the strata.
  • Cover and refrigerate 8 hours.
  • Let strata set out on counter for 15 minutes while the oven is preheating.
  • Bake at 350° for 45 minutes or until set.

Tips:

  • Choose a Variety of Vegetables: Use a mix of colorful and flavorful vegetables for added texture and nutrition.
  • Grate the Vegetables: Grating the vegetables helps them cook evenly and blend well with the other ingredients. Alternatively, you can chop them finely.
  • Use Fresh Herbs: Fresh herbs like parsley, thyme, or chives add a burst of flavor to the strata. Use them as a garnish or mix them into the egg mixture.
  • Don't Overmix: Overmixing the batter can result in a tough strata. Mix until just combined to ensure a light and fluffy texture.
  • Bake until Golden Brown: Bake the strata until the top is golden brown and a knife inserted in the center comes out clean. This indicates that the strata is cooked through.

Conclusion:

With its delectable combination of vegetables, cheese, and bread, the vegetable cheese strata is a versatile and satisfying dish perfect for breakfast, brunch, or even dinner. Its ease of preparation and customizable nature make it a favorite among home cooks. Whether you prefer a classic recipe or one with a twist, this savory dish is sure to impress. Experiment with different vegetables, cheeses, and herbs to create a strata that reflects your personal preferences and dietary requirements. So, gather your ingredients, preheat your oven, and embark on a culinary journey that will leave your taste buds delighted. Happy cooking and enjoy your delicious vegetable cheese strata!
