Cashew Fettuccine Alfredo image

WOW! This cashew fettuccine alfredo tastes decadent, but the creamy sauce is filled with healthy plant based ingredients. An easy dinner in under 30 minutes!

Provided by Sonja Overhiser

Categories     Main Dish

Time 25m

Yield 8

Number Of Ingredients 11

1 pound fettuccine noodles (use gluten-free, legume, or zucchini noodles if desired)
4 garlic cloves
1 small head cauliflower (1 1/2 to 2 pounds), enough for 6 cups florets
4 tablespoons olive oil
1 cup raw unsalted cashews
2 cups vegetable broth
1/8 teaspoon onion powder
1/8 + 1/4 teaspoon ground black pepper
Pinch nutmeg
1 teaspoon kosher salt
Finely chopped parsley, to serve

Steps:

  • Mince the garlic. Chop the cauliflower.
  • Make the pasta: Bring a large pot of salted water to a boil. Boil the pasta until it is al dente (start tasting a few minutes before the package recommends: you want it to be tender but still a little firm on the inside). Then drain the pasta and return it to the pot.
  • Meanwhile, start the sauce: Heat the olive oil in a large Dutch oven, pot, or saucepan (that has a cover) over medium heat. Add the cauliflower and cashews and saute for 4 minutes until lightly browned. Add the garlic and cook for 1 to 2 minutes until fragrant. Add the vegetable broth, onion powder, black pepper, nutmeg and 1/2 teaspoon kosher salt. Bring to a simmer, then cover and cook 6 to 7 minutes on medium high heat until the cauliflower is tender when pierced with a fork.
  • Blend the sauce: Carefully transfer the contents to a blender and add the remaining 1/2 teaspoon kosher salt and 1/4 teaspoon more black pepper. Blend on high until a smooth sauce forms.
  • Serve: Pour about 5 cups into 1 pound pasta (1 cup will be left over), or use it to taste. Top with finely chopped parsley and serve immediately.

BEST EVER CASHEW CHEESE SAUCE

Best Ever Cashew Cheese Sauce image

This is a versatile cashew cheese sauce that's totally plant-based. I use it as a pasta sauce, as a pizza topping, over roasted veggies, on tacos and for grilled cheese. It doesn't reheat well, so I don't suggest making a double batch to use throughout the week. -Max Gregor, Santa Fe, New Mexico

ROASTED VEGETABLES WITH CASHEW ROMESCO

Roasted Vegetables With Cashew Romesco image

Crisp yet fork-tender roasted vegetables get a spirited lift from a lively romesco sauce made with just a few ingredients. Each plays an important role: Roasted red peppers form the base of the sauce, cashews add creaminess and a bit of crunch, smoked paprika - along with other spices - provide a grounding depth. The sherry vinegar delivers a vibrant sparkle, and you can add more to your taste. Broccoli and cauliflower are the vehicles for the sauce here, but any combination of vegetables will work. The romesco will last for up to 1 week in the refrigerator in an airtight container.

Time 30m

Yield 4 servings

Number Of Ingredients 11

1 1/2 pounds broccoli (about 1 large head), trimmed and cut into 2½-inch-long florets
1 1/2 pounds cauliflower (about 1 large head), trimmed and cut into 2½-inch-long florets
1/2 cup extra-virgin olive oil
Kosher salt (Diamond Crystal) and black pepper
1/4 cup roasted unsalted cashews
2 garlic cloves, peeled
3 jarred roasted red peppers, drained (about 11 ounces)
1 teaspoon smoked paprika
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1 tablespoon sherry vinegar, plus more to taste

Steps:

  • Heat oven to 425 degrees. Place the broccoli and cauliflower on a sheet pan in an even layer. Drizzle with 1/4 cup oil, toss to coat and season lightly with salt and black pepper. Roast until the vegetables are crisp and lightly browned around the edges, 25 to 30 minutes.
  • While the vegetables are roasting, in the bowl of a food processor, pulse the cashews and garlic until finely chopped. Add the roasted red peppers, smoked paprika, coriander, cumin, vinegar and 1/2 teaspoon salt, and pulse to incorporate. While the food processor is going, drizzle in the remaining ¼ cup of oil. Turn off, taste and add more salt and sherry vinegar to season if necessary. The sauce should be thick but spreadable and should easily drop off a spoon when lifted.
  • Transfer the hot roasted broccoli and cauliflower to a serving platter. Spoon the cashew romesco on top. Serve immediately.

Tips:

  • Prep your vegetables in advance: Cut and clean your vegetables before you start cooking to save time and ensure even cooking.
  • Use a large skillet or wok: This will allow you to easily stir-fry the vegetables and prevent overcrowding, which can lead to steaming instead of frying.
  • Heat your skillet or wok over high heat: This will help to quickly sear the vegetables and prevent them from becoming soggy.
  • Add the vegetables to the skillet or wok in batches: This will prevent overcrowding and ensure that the vegetables cook evenly.
  • Stir-fry the vegetables for a short time: Overcooking can make the vegetables mushy, so cook them just until they are tender-crisp.
  • Add the cashews and sauce: Once the vegetables are cooked, add the cashews and sauce and stir-fry for a few minutes more, until the cashews are toasted and the sauce is heated through.
  • Serve immediately: Vegetable cashew stir-fry is best served hot, so make sure to have everything ready before you start cooking.

Conclusion:

Vegetable cashew stir-fry is a quick, easy, and delicious meal that is perfect for busy weeknights. It is packed with vegetables, protein, and healthy fats, and it is sure to please everyone at the table. So next time you are looking for a healthy and satisfying meal, give vegetable cashew stir-fry a try!
