6 cremini mushrooms, chopped
2 stalks celery, chopped
1 carrot, chopped
½ onion, chopped
½ beet, chopped
2 tablespoons vegetable oil, or more as needed, divided
1 cup cooked brown rice
3 tablespoons ground flaxseed meal
2 tablespoons sunflower seeds
1 tablespoon maple syrup
1 tablespoon liquid amino acids (such as Bragg®)
1 tablespoon fennel seeds
1 ½ teaspoons rubbed sage
½ teaspoon red pepper flakes
¼ teaspoon ground nutmeg
¼ teaspoon ground black pepper, or to taste
1 pinch ground thyme

Steps:

  • Combine mushrooms, celery, carrot, onion, and beet in a food processor. Blend into a chunky paste.

They definitely wouldn't fool anybody, but they will satisfy any craving you may have for breakfast sausage without harming pigs or raising your cholesterol, and they taste MUCH, MUCH better than any vegetarian sausages you can buy in the freezer of your health food store. 1/2 cup textured vegetable protein
1/2 cup boiling water
1/4 cup whole wheat flour (or gluten-free flour)
1/4 cup flax seed meal
1/4 cup oat bran or 1/4 cup wheat bran
2 tablespoons nutritional yeast
1 teaspoon garlic powder
1/2 teaspoon crushed sage
1/2 teaspoon ground fennel
1/4 teaspoon black pepper
1/8 teaspoon cayenne
1/4 cup water
1/2 teaspoon liquid smoke (optional)
3 tablespoons Braggs liquid aminos or 3 tablespoons soy sauce
1 teaspoon maple syrup
1/4 teaspoon blackstrap molasses

Steps:

  • Stir together tvp and boiling water and set aside to soak for 5 minutes.
  • Meanwhile, mix flour, flax, bran, and dry spices; stir to incorporate. Stir in tvp. 3/4 cup boiling water
2 tablespoons soy sauce
1 cup textured vegetable protein, granules
1/2 cup firm tofu, mashed up
2 teaspoons marjoram
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon thyme
1/2 teaspoon salt
1/2 teaspoon red pepper flakes
black pepper, for taste
1 teaspoon liquid smoke
1/2 cup wheat gluten flour or 1/2 cup unbleached flour

Steps:

  • In a bowl, pour the water and soy sauce over the TVP.
  • When soft add the other ingredients except the gluten and mix well.
  • When the mixture is cooled, add the gluten flour.
  • Mix well with your hands and form into 10 thin patties (I get 5).

  • In 2 batches, steam fry until browned & firm, 7-10 minutes per side.
