1 ¼ cups vegetable broth, divided

Tips:

  • Use high-quality leeks. Fresh, tender leeks with white and light green stalks will give the gratin the best flavor and texture.
  • Wash the leeks thoroughly. Leeks can be quite dirty, so it's important to rinse them well before using them.
  • Slice the leeks thinly. This will help them cook evenly and will also create a more delicate texture in the gratin.
  • Use a good quality vegan cheese. There are many different vegan cheeses available, so be sure to choose one that you like the taste of.
  • Don't overcook the gratin. The potatoes should be tender but still slightly firm, and the cheese should be melted and bubbly.

Conclusion:

This vegan potato leek gratin is a delicious and comforting dish that is perfect for a winter meal. It is easy to make and can be enjoyed by vegans and non-vegans alike. The creamy sauce, tender potatoes, and flavorful leeks make this gratin a real crowd-pleaser.
