1 ¼ cup all-purpose or spelt flour (or gluten-free flour, if needed)
1 cup semolina flour (or sub more regular flour)
½ tsp salt
¾ cup water
2 tsp olive oil
3 oz spinach (fresh or frozen)

After finding too many complicated recipients I decided to create my own quick and basic version for a Vegan Pasta Dough

260g Flour (00)
140ml water
2 tbsp olive oil
Extra flour for dusting and kneading
Salt for the cooking water

Steps:

  • Place flour into mixing bowl
  • Add oil to the flour
  • Add luke warm water to the mix and blend together
  • Once the mix has started to take form sprinkle some flour over the work surface and knead the dough until the mix has blended completely
  • Either roll the dough out to the desired thickness and hand cut your pasta or if you're lucky enough like myself to have a pasta roller machine with various attachments use that to create the finishing product.
  • Cooking time varies depending on the temperature of the water you are using and the thickness of the pasta you have made, I find that it averages between 30 seconds and 1 minute

Tips:

  • Use the right flour: A blend of semolina and all-purpose flour works best for vegan pasta dough. Semolina flour gives the pasta a nice texture and bite, while all-purpose flour helps to bind the dough together. Whole wheat flour can also be used, but the pasta will be a bit denser and may have a slightly bitter flavor.
  • Make sure the dough is well-hydrated: Vegan pasta dough needs a bit more water than traditional pasta dough because there are no eggs to bind it together. The dough should be smooth and elastic, but not too sticky. If the dough is too dry, it will be difficult to work with and the pasta will be tough.
