1 (15 ounce) can chickpeas (garbanzo beans), undrained
¼ teaspoon cream of tartar
¾ cup white sugar
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 210 degrees F (100 degrees C). Line a baking sheet with baking parchment.
  • Drain chickpeas, reserving 1/2 cup liquid from the can. Save the chickpeas for another use. Pour chickpea liquid into a bowl and add the cream of tartar. 1/4 teaspoon cream of tartar
Kosher salt
3/4 cup superfine sugar

  • Preheat the oven to 250 degrees F. Line 2 baking sheets with parchment.

  • Heat oven to 110C/90C fan/gas ¼ and line a baking tray with baking parchment. Drain the can of chickpeas over a bowl, saving the chickpeas for another recipe.
  • Using an electric whisk, beat the chickpea water until soft peaks form (similar to egg whites). Add the sugar a little at a time, whisking constantly until thick and glossy.
