Steps:
- Clean potatoes and peel if desired. Cut potatoes into 1/2" rounds and place in a large pot or your 6 qt instant pot.
- Add enough water to cover, which was about 5 cups in my IP.
- Add 1 tsp salt and garlic cloves.
- If using IP: attach the lid and using the STEAM setting - cook for 12 minutes. Use the QR method to remove the pressure.
- If using STOVETOP: bring to a boil then reduce heat to simmer, cover, and cook until soft, about 20-25 minutes.
- Carefully drain the water, reserving about 1/2 cup for later
- Add almond milk and mash until smooth and creamy
- Season with salt & pepper.
- If the potatoes seem too dry, add a little bit of the reserved potato water until you reach your desired consistency
- Stir in miso and mix well. Whip with an electric mixer if desired and serve with your favorite gravy.
- A sprinkling of paprika or chopped chives makes a nice garnish.

Steps:
- For creamier mashed potatoes, peel your potatoes at this time. Otherwise, just halve your potatoes and place in a large saucepan or pot and cover with water by ~1 inch.
- Bring to a light boil over high heat and add 1 tsp of sea salt (as original recipe is written // adjust if altering batch size), and cook for 25-30 minutes or until very tender. They should effortlessly slide off a knife when pierced with a knife.
- While the potatoes are cooking, chop up your chives (optional) and measure your vegan butter.
- Once tender, drain your potatoes and place them back in the hot pot off the heat for 1 minute to evaporate any additional water.
- Mash your potatoes using a potato masher until fluffy.
- Add in vegan butter, garlic, salt, and black pepper and stir to combine. Taste and adjust seasonings as needed.
- Lastly top with chives (optional, stir and serve as is or with your favorite gravy (or mushroom gravy). Leftovers will keep in the fridge covered for up to a few days. Not freezer friendly.

LEEK MASHED POTATOES
Steps:
- Peel the potatoes and cut them into 1-inch pieces. Put them into a large pot of cold water. Add a big pinch of salt and put the pot over high heat. When it comes to a boil, cook until the potatoes are just cooked through, about 20 minutes.
- While the potatoes are cooking, slice the leeks into small pieces and thoroughly wash to remove any dirt. Put a medium skillet over medium-low heat and add 2 tablespoons butter. When the butter is melted, add the leeks and season with salt and pepper. Cook the leeks until they are very soft, being careful not to let them color or burn, about 20 minutes.
- Drain the potatoes in a colander. Then put the potatoes back into the pot and let the potatoes dry out a bit while you finish the leeks.
- In a small pot over low heat, add the milk, the remaining 4 tablespoons butter, garlic and thyme and warm it up. Strain the garlic and thyme from the warm milk and stir the milk into the potatoes using a wooden spoon. Mash with a potato masher, breaking up the big lumps. Stir in the melted leeks, taste and season with salt and pepper. Reserve 2 cups for another use if desired, such as the Round 2 Recipe Thanksgiving Pie. Cover the rest and keep warm until ready to serve.

Steps:
- In a large heavy skillet cook the leeks and 4 tablespoons of the butter, covered, over moderate heat, stirring occasionally, for 8 to 10 minutes, or until they are very tender, and keep them warm. In a kettle combine the potatoes, peeled and cut into 1-inch pieces, the garlic, and enough water to cover the potatoes by 1 inch, bring the water to a boil, and simmer the potatoes for 10 to 15 minutes, or until they are tender. Drain the potatoes and garlic in a large colander, return the potatoes to the kettle, reserving the garlic, and cook them over moderate heat, shaking the kettle, for 30 seconds to let any excess liquid evaporate. Peel the reserved garlic, force the garlic and the potatoes through a ricer or the medium disk of a food mill into a bowl, and stir in the remaining 2 tablespoons butter, the leeks, the milk, and the salt and pepper to taste.
Tips:
- Choose the right potatoes: Yukon Gold or russet potatoes are best for mashing because they have a high starch content, which makes them fluffy and smooth.
- Use fresh garlic and leeks: Fresh garlic and leeks add the best flavor to this dish. If you don't have fresh garlic, you can use 1/2 teaspoon of garlic powder.
- Cook the leeks until they are soft: Leeks should be cooked until they are very soft and caramelized. This will bring out their sweetness and flavor.
- Don't overcook the potatoes: Overcooked potatoes will become gluey and sticky. Cook them until they are just tender, but still hold their shape.
- Use a potato ricer or food mill to get the smoothest mashed potatoes: A potato ricer or food mill will help you get the smoothest, creamiest mashed potatoes. If you don't have either of these tools, you can mash the potatoes with a potato masher or an electric hand mixer.
- Add the milk and butter gradually: Add the milk and butter gradually, and stir constantly, until the mashed potatoes reach the desired consistency. You may not need all of the milk and butter.
- Season to taste: Season the mashed potatoes with salt, pepper, and nutmeg to taste.
- Serve immediately: Mashed potatoes are best served immediately. If you need to make them ahead of time, you can reheat them gently in a saucepan over low heat.
Conclusion:
This vegan leek and garlic mashed potatoes recipe is a delicious and easy side dish that is perfect for any occasion. The leeks and garlic add a ton of flavor, and the potatoes are creamy and smooth. This dish is sure to be a hit with everyone at your table.
