¼ cup extra-virgin olive oil
3 leeks, thinly sliced
1 cup chopped red potatoes
1 cup peeled and sliced parsnips
1 cup peeled and chopped turnip
1 cup sliced celery
1 cup sliced carrots
4 cups garbanzo beans, drained
4 cups low-sodium vegetable broth
2 cups vegan stout beer (such as Samuel Smith's)
½ cup chopped fresh parsley
¼ teaspoon dried rosemary
¼ teaspoon dried thyme

Cook and stir until slightly tender and coated in oil, about 4 minutes. Add garbanzo beans, vegetable broth, beer, and parsley. Bring stew to a boil.

Time 8h30m

Yield 6 bowls, 6 serving(s)

Number Of Ingredients 13

1 small onion, chopped
3 garlic cloves, chopped
2 cups carrots, chopped
5 cups potatoes, cubed
1 cup celery, chopped
2 tablespoons olive oil
1 tablespoon thyme
1 tablespoon bay leaf
1 Guinness stout
1 cup tomato sauce
1 cup dried lentils
2 cups water
1 cup peas

Steps:

  • Place everything in crock pot and cook on low for 6 hours. After 6 hours, add peas and cook for 2 more hours. If stew thickens too much, add some additional water.

Tips:

  • Prep ahead: Cut and measure the vegetables in advance to make the cooking process quicker and smoother.
  • Choose your potatoes wisely: Waxy potatoes, such as Yukon Gold or red potatoes, hold their shape well and are less likely to fall apart in the stew.
  • Brown the seitan: Browning the seitan before adding it to the stew adds depth of flavor and a slightly chewy texture.
  • Simmer gently: Bring the stew to a boil, then reduce the heat to low and simmer for at least 30 minutes, or until the vegetables are tender.
  • Season to taste: Taste the stew and adjust the seasonings as needed. You may want to add more salt, pepper, herbs, or spices.
  • Garnish before serving: Fresh parsley, thyme, or chopped chives add a pop of color and flavor to the stew.

Conclusion:

This easy and hearty vegan Irish stew is a delicious and satisfying meal that is perfect for a cold winter day. With its tender vegetables, flavorful seitan, and rich broth, this stew is sure to warm you up from the inside out. Serve it with a side of crusty bread or mashed potatoes for a complete meal. Whether you're a vegan, vegetarian, or simply looking for a meatless meal, this stew is sure to become a favorite. Enjoy!
