Yield serves 6

Number Of Ingredients 8

1 onion, coarsely chopped
3 tablespoons vegetable or extra-virgin olive oil
4 cloves garlic, finely chopped
1 pound ripe tomatoes, peeled and chopped
1 pound green snap beans, topped and tailed and cut into 2 or 3 pieces
Salt and pepper
1 teaspoon sugar
Juice of 1/2 lemon (optional)

Steps:

  • Fry the onion in oil till soft and golden. Add the garlic, and when the aroma rises, add the tomatoes and beans. Season with salt, pepper, and sugar, add water if necessary to cover the beans, and lemon juice if using, and simmer 15-20 minutes, or until the beans are tender and the sauce reduced a little.

Tips:

  • Choose fresh green beans: Look for beans that are bright green and crisp. Avoid beans that are limp or have brown spots.
  • Trim the green beans: Cut off the ends of the beans, where the stems attach to the pods.
  • Blanch the green beans (optional): Blanching the beans in boiling water for a few minutes helps to preserve their color and crispness. To blanch the beans, bring a large pot of water to a boil. Add the beans and cook for 2-3 minutes. Drain the beans in a colander and rinse with cold water.
  • Use a variety of tomatoes: This recipe calls for a combination of fresh tomatoes and canned diced tomatoes. You can also use cherry tomatoes or grape tomatoes.
  • Add vegetables: Feel free to add other vegetables to this dish, such as zucchini, bell peppers, or onions.
  • Season to taste: Add salt, pepper, and other seasonings to taste. You can also add a pinch of red pepper flakes for a little spice.
