1 onion
2 cloves of garlic
3/4 cup soy cream (unsweetened)
1 teaspoon soy sauce
1 teaspoon corn starch (plus two teaspoons of water)
salt, to taste
black pepper, to taste
14 oz frozen green beans
1/4 cup vegan cheese shreds
3 tablespoons whole wheat bread crumbs
1/2 teaspoon paprika powder
1/2 teaspoon garlic powder
1/4 cup freshly chopped parsley

Steps:

  • Finely chop the onion and slice the mushrooms.
  • Heat some oil in a large pan and sauté the chopped onion for about 2 minutes on high heat. Then add the mushrooms and the garlic and cook them for another 3 minutes.
  • Stir in the soy or oat cream. If you can't find soy or oat cream, you could also use thick full-fat coconut milk.

3 tablespoons olive oil
8 ounces cremini mushrooms, thinly sliced
Freshly ground black pepper
1 medium onion, finely diced

1 tablespoon fresh thyme leaves
3/4 cup low-sodium vegetable broth
3 tablespoons all-purpose flour
1 cup unsweetened, unflavored almond milk
1/3 cup dairy-free sour cream
1 teaspoon soy sauce

1 lb frozen French-cut green beans, thawed
1 cup soymilk
28 ounces French-fried onions, divided
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups onions, finely diced
2 teaspoons canola oil
2 tablespoons garlic, minced
8 cups vegetable stock
2/3 cup tamari
2 teaspoons rubbed sage
1 teaspoon dried thyme
2 teaspoons salt
1 teaspoon pepper
1 1/2 cups flour, browned (see note)
1/4 cup chopped fresh parsley

Steps:

  • Grease casserole then combine half of the french fried onions with all of the ingredients and stir well.
  • Bake at 350F for 15-20 minutes or until bubbly.
  • Sprinkle the remaining french fried onions over the top of the casserole and bake an additional 5 minutes or until onions are crisp and golden brown.

Olive oil, for greasing the baking dish
1 tablespoon plus 2 teaspoons kosher salt
1 1/2 pounds green beans, trimmed
2 tablespoons vegan butter
1 pound sliced white button or baby bella mushrooms
2 small or 1 large shallot, chopped
2 garlic cloves, minced
2 tablespoons unbleached, all-purpose flour
2 cups unsweetened soy, oat or almond milk
Black pepper, to taste
1 1/2 cups store-bought fried onions

Steps:

  • Heat the oven to 350 degrees and oil a 3-quart baking dish.
  • Fill a large pot with water. Add 1 tablespoon salt to the water and bring to a boil. Add the green beans and boil for 4 minutes (or 3 minutes if you are using French beans).
