I've experimented with these a lot and have finally found a combination that comes out as stiff as gelatin desserts but are completely vegan. Works well as a substitute for gelatin in other recipes or just as treats on it's own. Half of a cup of chilled juice can be replaced with your favorite liquor to make a cocktail.

Tips:

  • Use high-quality agar agar powder: Look for organic and non-GMO agar agar powder to ensure the best results.
  • Bloom the agar agar powder before using: Blooming helps the agar agar powder absorb water and dissolve more easily. To bloom the agar agar powder, whisk it with a small amount of water and let it sit for 5-10 minutes before adding it to the rest of your ingredients.
  • Use the right amount of agar agar powder: The amount of agar agar powder you need will depend on the desired consistency of your dish. For a firm gel, use 1 tablespoon of agar agar powder per cup of liquid. For a softer gel, use 1/2 tablespoon of agar agar powder per cup of liquid.
  • Bring the mixture to a boil: Agar agar powder needs to be brought to a boil in order to activate it. Once the mixture has come to a boil, reduce the heat to low and simmer for 1-2 minutes.
  • Let the mixture cool slightly before using: Once the mixture has been removed from the heat, let it cool slightly before using. This will help prevent the agar agar from setting too quickly.
  • Store the agar agar gel properly: Agar agar gel can be stored in the refrigerator for up to 2 weeks. To store the gel, pour it into a mold or container and cover it tightly with plastic wrap.

Conclusion:

Agar agar is a versatile vegan gelatin alternative that can be used in a variety of dishes. It is easy to use and can be used to make a variety of delicious and healthy dishes. With its many health benefits, agar agar is a great choice for those looking for a healthier alternative to gelatin.
