3 1/2 cups icing sugar (sift if lumpy)
1 1/2 teaspoons vanilla extract (organic please)
1/4 cup soymilk (plain or plain soy creamer)

Steps:

  • Beat the shortening and margarine together until fluffy. Add the sugar and beat for 3 more minutes.
  • Add the vanilla. Add the soy milk/creamer slowly. You should be left with a light fluffy frosting.
  • You can also stir in a 1/2 cup of crushed cookies, or vegan chocolate cream filled sandwich cookies.

1/2 cup vegan margarine (Earth Balance)
3 1/2 cups powdered sugar
1 1/2 teaspoons vanilla extract
1/4 cup plain soymilk (or almond milk)

Steps:

  • Beat the shortening and margarine together until well combined (about 5 minutes).
  • Add the sugar, and beat for about 3 more minutes.
  • Add vanilla and soy milk.
  • Beat an additional 5-7 minutes until fluffy!
