COCONUT RED CURRY WITH TOFU

Coconut Red Curry With Tofu image

This simple weeknight red curry relies on jarred or canned red curry paste for flavor, which you can find at larger supermarkets and specialty markets. Transfer leftover canned curry paste to a jar, top it with a little oil and store in the refrigerator for up to a month. Or freeze for longer storage. Feel free to substitute other vegetables for the mushrooms and snow peas, though you might have to increase the cooking time slightly if using something dense like carrot or cubed winter squash.

Tips:

  • Use firm or extra-firm tofu for the best texture. Extra-firm tofu holds its shape better in the curry and won't crumble as easily.
  • Press the tofu before cooking. This helps to remove excess moisture from the tofu, resulting in a more flavorful and chewy texture.
  • Marinate the tofu in the curry sauce before cooking. This allows the tofu to absorb the flavors of the sauce and become more flavorful.
  • Use a variety of vegetables in the curry. This will add color, flavor, and nutrients to the dish. Some good options include bell peppers, carrots, broccoli, and snap peas.
  • Simmer the curry for at least 30 minutes. This allows the flavors to meld and the tofu to become tender.
  • Serve the curry with rice or naan bread. This will help to soak up the delicious sauce.

Conclusion:

This vegan coconut curry with tofu is a delicious and easy-to-make dish that is perfect for a weeknight meal. The curry is flavorful and creamy, and the tofu is tender and packed with protein. This dish is also a great way to get your daily dose of vegetables. Serve it with rice or naan bread for a complete meal.
