Sweet apples, tart cranberries, a kiss of vanilla and cinnamon ... perfection. This festive yet simple dessert is a total crowd-pleaser, vegan or otherwise.

Provided by Kare for Kitchen Treaty

Time 50m

Number Of Ingredients 13

5 medium Granny Smith apples
2 cups fresh cranberries (rinsed and picked over)
2/3 cup granulated sugar*
2 teaspoons ground cinnamon
1 teaspoon cornstarch
1 teaspoon pure vanilla extract
1 cup rolled oats
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon fine-grain sea salt
1/2 cup solid coconut oil
Vanilla ice cream (optional but highly recommended. My favorite non-dairy/vegan vanilla ice cream is Coconut Bliss Vanilla Island.)

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • To a large bowl, add the filling ingredients. Toss well to combine. Pour into a 9-inch by 13-inch baking dish and spread into a relatively even layer.
  • To a medium bowl (or rinse and wipe out the large bowl to reuse), add the oats, flour, brown sugar, cinnamon, and salt. Stir until well-combined. Add the coconut oil and cut in with a pastry blender or butter knives. Mix well, until topping resembles coarse crumbs. Pour evenly over apple cranberry filling.
  • Bake until bubbly, apples are fork-tender, and the top is golden-brown, 35-40 minutes.
  • Allow to cool for about 10 minutes, then serve - preferably alongside a generous scoop of vanilla ice cream. Yum!

VEGAN PEANUT BUTTER APPLE CRISP

Vegan Peanut Butter Apple Crisp image

This is a cut-and-paste recipe from various other recipes I have. Since I work with a vegan, and I constantly bake for my coworkers, I'm always on the lookout for vegan-friendly recipes that don't require a special trip to the earthy-crunchy store. This one fits the bill, and it actually tastes good enough that non-vegans won't feel as though they're missing anything (which is marvelous when you don't feel like making two different recipes).

Provided by Muffin Goddess

Categories     Dessert

Time 1h

Yield 1 9x9inch pan

Number Of Ingredients 10

1/2 cup peanut butter
1/4 cup butter flavor shortening
1/2 cup flour
1/2 cup rolled oats
3/4 cup turbinado sugar, divided
4 -5 apples (Macintosh, Granny Smith, and Golden Delicious all work well here)
1 teaspoon ground cinnamon
1/2 teaspoon grated fresh lemon rind
2 tablespoons lemon juice
2 tablespoons water

Steps:

  • In a large bowl, cut peanut butter and shortening into flour and 1/2 cup of sugar until crumbly (use two knives or a pastry blender).
  • Peel, core, and slice apples.
  • Pile prepared apples into a 9-inch square pan, and sprinkle with cinnamon, lemon rind, and 1/4 cup sugar.
  • Add lemon juice and water.
  • Cover apples with crumb mixture.
  • Bake for 45 minutes.
  • Serve while still warm.

Tips:

  • Choose the right apples: Use a variety of apples with different textures and flavors, such as Granny Smith, Honeycrisp, and Braeburn. This will create a more complex and flavorful crisp.
  • Peel and slice the apples thinly: This will help them cook evenly and become tender.
  • Use a combination of spices: Ground cinnamon, nutmeg, and ginger are classic spices for apple crisp. You can also add a pinch of salt to balance the sweetness.
  • Don't overmix the topping: The topping should be crumbly, not doughy. If you overmix it, it will become tough.
  • Bake the crisp until the topping is golden brown and the apples are bubbling: This usually takes about 30-35 minutes. Cover it with foil if it start to brown too quickly.
  • Serve the crisp warm with a scoop of vanilla ice cream or whipped cream: This is the best way to enjoy this classic dessert.

Conclusion:

Apple crisp is a delicious and easy-to-make dessert that is perfect for any occasion. With its simple ingredients and customizable toppings, it's a versatile dish that can be enjoyed by everyone. Whether you're looking for a classic fall dessert or a healthier alternative to traditional apple pie, vegan apple crisp is the perfect choice. So next time you're in the mood for something sweet and satisfying, give this recipe a try.
