These Healthy 4 Ingredient Applesauce Cookies are soft, chewy and take less than 15 minutes to whip up! They are an easy snack or breakfast option- Naturally gluten free and vegan, there is an option to keep it completely sugar-free too!

Number Of Ingredients 6

2 cups gluten free rolled oats
1/2 cup Pumpkin puree (not pumpkin pie filling)
1/2 cup unsweetened applesauce
1/4 cup granulated sweetener of choice
1 tablespoon Cinnamon/apple pie spice (optional)
2 tablespoon peanut butter (* Optional- See notes)

Steps:

  • Preheat the oven to 180C/350F and lightly grease a baking tray and set aside.
  • In a large mixing bowl, combine the oats, pumpkin, applesauce and granulated sweetener of choice and mix well. If desired, add 2 tablespoons or so of your favorite nut butter.
  • Using your hands, form12 balls and place on the baking tray and press each ball into a cookie shape. Sprinkle lightly with cinnamon and bake for 12-15 minutes, depending on desired consistency.
  • Remove and allow to cool completely.

Heart Healthy Vegan Cookies, I made up this recipe as I was making it. There is no oils of any kind so your heart will thank you! They are a mild tasting, almost cake like, which are sweet but not too much. My kids loved them!

Yield 24-36 cookies

Number Of Ingredients 8

2 tablespoons flax seeds (use ground flaxseed and mix with water as an egg substitute)
6 tablespoons water
1/2 cup applesauce (Homemade is the best)
1/3 cup honey
2 teaspoons vanilla
1 teaspoon baking soda
3/4 cup whole wheat flour
3/4 cup white flour

Steps:

  • Pre-heat oven to 350 degrees.
  • For Egg Substitute whisk ground flax seed and water in it's own bowl.
  • Mix Apple Sauce, Honey, Vanilla, lastly add in the egg replacers.
  • In another bowl mix baking soda and flours.
  • Add flour to the Apple sauce bowl and slowly blend together.
  • Drop by spoonfuls onto un-greased cookie sheet.
  • Bake for 9 minute.
