I came across an African sweet potato stew recipe a few years ago, and adapted it to suit our taste. It is very flavorful and just a bit spicy - just right for cold days! This recipe makes a lot of stew, so it may be halved for a smaller portion, but also freezes very well.

Tips:

  • Choose the right sweet potatoes:Look for firm, brightly colored sweet potatoes that are free of blemishes. Avoid any that are soft or have bruises.
  • Don't peel the sweet potatoes:The skin of sweet potatoes is packed with nutrients, so leave it on for added flavor and nutrition.
  • Use a variety of vegetables:This stew is a great way to use up leftover vegetables. Feel free to add any vegetables that you like, such as carrots, celery, bell peppers, or zucchini.
  • Don't overcrowd the pot:If you overcrowd the pot, the vegetables will not cook evenly. Cook the stew in batches if necessary.
  • Simmer until the vegetables are tender:The stew should simmer for at least 30 minutes, or until the vegetables are tender. This will allow the flavors to meld and develop.
  • Serve with your favorite sides:This stew can be served with a variety of sides, such as rice, quinoa, or bread.

Conclusion:

This vegan African sweet potato stew is a delicious, healthy, and easy-to-make meal. It is perfect for a weeknight dinner or a potluck. With its vibrant flavors and textures, this stew is sure to be a hit with everyone who tries it.
