VEAL STEW WITH DILL

Categories     Stew     Veal     Dill     Simmer     Boil

Yield makes 4 servings

Number Of Ingredients 9

1 1/2 pounds boneless veal shoulder, cut into roughly 1 1/2-inch chunks
4 shallots, peeled
8 to 12 very small new potatoes
Salt and freshly ground black pepper
2 carrots, cut into roughly pea-sized bits (optional)
1 cup shelled fresh or frozen peas
8 scallions, roughly chopped (optional)
1/2 cup snipped fresh dill for garnish, or more to taste
Lemon wedges for serving

Steps:

  • Put the veal in a broad skillet over high heat; sear, undisturbed, for about 4 minutes, or until the underside is nicely browned (don't worry if not all of the pieces brown). Stir, then add the shallots and potatoes. Cook for another couple of minutes, then add salt, pepper, and 1 1/2 cups of water. Stir, scraping the bottom if necessary to loosen any bits of meat that may have stuck. Turn the heat to low, cover, and simmer for about 45 minutes, stirring once or twice during that period.
  • Uncover and add the carrots if you're using them; stir once, recover, and simmer for about 15 minutes more, or until the veal and potatoes are tender.
  • Uncover and add the peas and scallions if you like. Raise the heat if necessary to boil away excess liquid. Taste and adjust the seasoning, then serve, garnished with the dill and accompanied by a lemon wedge.

VEAL WITH LEMON AND CAPERS

Provided by Food Network

Categories     main-dish

Time 40m

Yield 8 servings

Number Of Ingredients 8

2 pounds veal scaloppini
1 cup all-purpose flour
Salt and freshly ground black pepper
Olive oil and butter, equal amounts, enough to coat the skillet, plus 1 tablespoon
1 1/2 cups chicken stock
Capers
1/2 lemon, juiced, plus 1/2 lemon thinly sliced, for garnish
Chopped parsley leaves, for garnish

Steps:

  • Pour the flour mixture on a plate, and season with salt and pepper. Dredge the scaloppini in the flour and shake off the excess, set aside. Melt butter and olive oil together in a skillet over medium fire. Add scaloppini to skillet and brown on both sides. Set aside until all the veal has been cooked. After the veal has been removed from the pan, add the chicken stock to the pan over high heat and scrape the bottom of the pan to loosen the brown bits. Cook until the liquid has thickened. Straining the liquid may be necessary to remove the larger pieces of the scrapings. Add 1 tablespoon of butter, capers, lemon juice and parsley to sauce. Stir over a high heat about 5 minutes. Pour sauce over the veal. Garnish with sliced lemons and serve.

Categories     dinner, main course

Time 1h30m

Yield 6 servings

Number Of Ingredients 11

1/2 tablespoon sweet butter
1/2 tablespoon vegetable oil
3 pounds boneless veal for stew
3 tablespoons finely minced shallots
1 large clove garlic, minced
1 cup semidry white wine such as Riesling
1/2 cup well-flavored veal or chicken stock
Salt and freshly ground white pepper
1 cup heavy cream
1/4 cup finely minced fresh dill
1 teaspoon fresh lemon juice

Steps:

  • Heat the butter and oil in a heavy three-quart casserole. Add the veal and sear it until it is lightly browned. Remove the veal from the pan.

Tips:

  • Choosing the right cut of veal is essential for a tender and flavorful stew. Look for veal shoulder or chuck, which are well-marbled and will braise beautifully.
  • Browning the veal before braising adds depth of flavor to the stew. Be sure to brown the meat in batches to avoid overcrowding the pan and steaming the meat.
  • Don't be afraid to use a variety of vegetables in your stew. Carrots, celery, onions, and potatoes are all classic additions, but you can also add other vegetables such as parsnips, turnips, or rutabagas.
  • Using a good quality broth or stock is essential for a flavorful stew. If you don't have homemade broth on hand, use a low-sodium store-bought broth.
  • Season the stew well with salt and pepper. You can also add other herbs and spices to taste, such as thyme, rosemary, or bay leaves.
  • Simmer the stew for at least 1 hour, or until the meat is tender and the vegetables are cooked through.
  • Serve the stew over mashed potatoes, rice, or noodles. You can also garnish the stew with fresh herbs, such as parsley or dill.

Conclusion:

Veal stew with lemon and dill is a classic comfort food that is perfect for a cold winter day. Made with tender veal, flavorful vegetables, and a tangy lemon and dill sauce, this stew is sure to warm you up from the inside out. So next time you're looking for a hearty and delicious meal, give this veal stew a try. You won't be disappointed!
